Chocolate Crepe Cake

Bring a bit of France into your home by making this delicious and light chocolate dessert!

Ingredients for the crepes:


1 3/4 cup cake flour
1 cups bread flour
1/2 cup cocoa powder
1/3 cup sugar
1 teaspoon Ferna Iodized salt
6 eggs
6 egg yolks
3/4 cup butter
3 cups milk, warm
1/3 cup brandy

Directions for the crepes:


1. Sift the dry ingredients. Mix together the eggs and milk.
2. Mix the dry ingredients with the liquid ingredients. Add the butter and brandy.
3. Let it stand for 1 hour.
4. Cook Crepes in a pan constantly brushed with melted butter.

Ingredients for hazelnut filling:


1/3 cup heavy cream, soft whipped
3 egg whites
3/4 cup sugar
1 cup butter, whipped
1 teaspoon vanilla
1/3 cup hazelnut spread

Directions for hazelnut filling:


1. Melt the sugar in the eggw hites over a double boiler., beat until cool
2. Add the butter slowly until fully incorporated
3. Add the hazelnut spread and fold in the whipped cream

Ingredients for Chocolate Glaze:


1 1/4 cups heavy cream
1 tablespoon light corn syrup
1 salt
10 ounces semisweet chocolate, finely chopped
