• Chorizo (big chunk) – cut into small cubes • Bacon (6 rashers) – cut into small pieces • Garlic – about 3 cloves – crushed • Red Onion x 2 – sliced • Sweet Potato / Potato x 2 – cut into small chunks • Mushrooms (small packet)– sliced • Broad beans (2 cupfuls) • Carrots x 2 (diced) • Lentils (green) • Tinned cherry tomatoes x 1 • Chicken stock – 800ml • Double cream - 150ml • Plain flour – 2 tablespoons • Paprika • Rosemary, Basil. Oregano • Salt, Pepper • Tabasco Sauce • Red Wine (1 glass)
1. Heat oven to 160 degrees
2. Fry the onions, garlic, bacon, sausages, bacon, mushrooms in a casserole dish on the hob 3. Sprinkle in about 2 teaspoons of paprika, add salt and pepper 4. Take off heat and mix 5. Add sweet potato / potato, broad beans, tinned cherry tomatoes and carrots 6. Sprinkle over a full layer of lentils (rinse first) 7. Add the chicken stock & Red Wine 8. Add herbs, a good sprinkle of each (about 1 teaspoon), and a few drops of Tabasco sauce 9. Mix, Cover and put in the oven for 1 & ½ hours For last 30 minutes – sprinkle in the sieved flour & add the double cream, stir well and put back in oven 10. Serve with cheesy mash (mixed with crème fraiche and mature cheddar), bread and coleslaw…. ENJOY!!!
