Ingredients
½ cucumber
2 tomatoes
1 bunch spring onion, roughly chopped
1 tbsp lemon juice
1 tbsp olive oil
¼ tsp salt
¼ tsp freshly ground black pepper
1 tbsp freshly chopped coriander leaves
30g/1 oz roasted salted peanuts, crushed

Peel the cucumber and chop it finely. Chop the tomatoes finely, then place the cucumber,
tomatoes and spring onions into a serving bowl.

Combine the lemon juice, olive oil, salt, pepper and coriander leaves and set to one side.
Combine all the ingredients just before serving.

    

Ingredients

280-340g/ 10-12oz white cabbage


1 small onion, finelyt chopped
1 fresh green chilli, finely chopped, seeded if a milder flavour is preferred
2-3 tbsps thick-set natural yogurt
2 tsps mint sauce
½ tsp salt

Grate the cabbage or shred it very finely, then place it in a large mixing bowl. Add the rest of
the ingredients and mix thoroughly. Place the salad in a serving dish, cover and chill before
serving.
