Chicken Wings

(Parrot Sticks)
Parrot Rub

2tbsp turbinado sugar

(may substitute with Demerara or raw sugar)

2tbsp of kosher or coarse salt

2tbsp paprika

1tbsp of fresh ground pepper

1 tsp seasoning salt

1tsp onion powder

½ tsp celery salt

½ tsp cayenne pepper

Combine all ingredients well and store in an airtight container.

Wings

12 whole chicken wings

12 wooden skewers soaked in water 1 hour

2 tbsp canola oil

2 or 3 tbsp parrot rub

1 teaspoon cornstarch

Sauce for dipping

Preheat BBQ to medium heat. Skewer whole chicken wing with wooden skewers from tip to
drumette so that they are fully extended and resemble a parrot shape. Lightly rub canola oil
over the wings and sprinkle with parrot rub.

Lightly dust wings with the sifted cornstarch and grill at medium heat for 25 to 35 minutes,
turning frequently until wings are done. Serve with sauce.
