METHOD
Beat the eggs. Gradually beat in sugar, a little at a time, then continue to beat until stiff. Add
egg yolks and vanilla essence and beat until combined. Sift together cornflour, flour, salt,
cocoa powder and baking powder. Add the flour mixture to the egg mixture with a light hand.
Pour batter into a microwave container.Cook on Microwave HIGH for three minutes. If it is not
done then bake for a further thirty seconds and check. Check every thirty seconds till the cake
is fully baked. Take it out of the oven and transfer onto a wire rack to cool. Decorate cake with
whipped cream and cherries. You can also sprinkle some instant coffee over the cake while it
is still a little hot.
Recipe Tip :
700 watt microwave ovens will only need 2 ½ minutes.600-650 watt microwave ovens will need 3
minutes.

METHOD
Preheat oven to 180 º C. Grease an eight inch round tin. Sieve self-raising flour with baking
powder, salt and cocoa powder. Mix together softened butter with sugar and beat well with a
wire whisk or electric beater till light and fluffy. Mix in one egg at a time.Fold in flour and cocoa
mixture two to three spoons at a time, taking a little of buttermilk to make a smooth batter.
Lastly mix in vanilla essence. Pour batter in prepared cake tin and bake at 180 º C for thirty
five to forty minutes.
