BUTTERMILK RUSKS

3 x 500g packets self- raising flour


1 x 500 ml carton buttermilk
2 cups sugar
500g margarine
3 eggs
2 heaped teaspoons baking powder
1 teaspoon salt

Beat together eggs and sugar.


Add buttermilk.
Crumb margarine and flour.
Add baking powder and salt.
Add buttermilk mixture.
Mix thoroughly.
Pack balls of mixture into a bgreased baking tray.
Bake 180 for about 40 minutes or until done.
Cool and break and leave in a warm oven overnight to dry.
