Christmas Recipe : Festive Fruitcake

Ingredients:

12 cups raisins
3 cups dried currants
2 pounds candied mixed fruit
1 pound candied cherries
1 (16 ounce) jar maraschino cherries, drained
1 1/4 cups dates, pitted and chopped
1 cup all-purpose flour
2 cups butter, softened
2 cups white sugar
12 egg yolks
1 (15 ounce) can crushed pineapple with juice
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
4 teaspoons unsweetened cocoa powder
4 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 cup orange juice
4 cups chopped walnuts
12 egg whites
Method :
1. Preheat oven to 275 degrees F (135 degrees C). Grease four 9 x 5 x 3 inch loaf pans, and
then line with brown paper or foil. Grease again.
2. In a large container stir raisins, currants, candied fruit mix, candied cherries, maraschino
cherries, dates, and 1 cup flour together until all the fruit is well coated with flour.
3. Measure 2 1/4 cup flour, baking powder, baking soda, salt, cocoa, cinnamon, and nutmeg
into a medium bowl. Stir to mix.
4. In a very large bowl, cream the butter or margarine with the sugar. Beat in egg yolks
three at a time. Stir in pineapple with juice and vanilla. Add flour mixture in 3 parts
alternately with fruit juice in 2 parts to the creamed mixture, beginning and ending with
flour mixture. Stir in walnuts.
5. In another bowl, beat egg whites until stiff. Fold egg whites into batter, and stir in fruit
gently. Divide batter among pans. Smooth.
6. Bake for about 3 hours until an inserted wooden pick comes out clean.

Recipe : Crushed Pineapple Fruitcake


Ingredients:

3/4 cup butter


1 cup white sugar
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon almond extract
3 cups golden raisins
1/2 cup red candied cherries
1 cup candied mixed fruit peel
1 (15 ounce) can crushed pineapple with juice
Method :
1. Line an angel food pan with parchment paper, and brush with melted butter.
2. Cream butter or margarine, and then beat in sugar. Beat in eggs one at a time, beating
well after each addition. Stir in extract. Mix in flour, baking powder, and salt. Stir in
raisins, cherries, pineapple, and mixed peel. Allow this to sit overnight in covered bowl.
3. Bake at 300 degrees F (150 degrees C) for 2 1/2 hours with a pan of hot water placed on
the lowest rack of your oven during baking. Brush warm cake with some melted butter.

SWEET MANGO PICKLE


RECIPE
Ingredients:

1 kg raw Mangoes (Aam) peeled and thinly sliced


120 grams Salt (Namak)
1 teaspoonful Turmeric (Haldi)
11/2 teaspoons Red chili pepper (Lal Mirchi)
3 teaspoons aniseed
2 teaspoons fenugreek seeds
2 3/4 cups Sugar (Cheeni)
1/2 teaspoon Onions seeds (Kalonji)

How to make sweet mango pickle :


• Mix all the above ingredients together, put in clean jar and cover with a closely fitting lid.
• Keep in the sun and shake it once daily till mangoes are soft. LI>
Tandoori pakoda
Ingredients:
250 gm cottage cheese (paneer)
2 green chilly (hari mirch)
2 onion (pyaj)
1/4 cup curd (dahi)
2 cup gram flour (besan)
a pinch baking powder
1/2 tsp red chilly powder (lal mirch)
1 tsp salt (namak)
a pinch orange colour
oil for frying

How to make tandoori paneer pakora:


• Cut paneer, hari mirch and pyaj into small long pieces.
• Mix dahi, namak, lal mirch, baking powder and orange colour in besan and make a thick
batter using water.
• Heat oil in a pan.
• Dip a piece of paneer, hari mirch and onion in the batter and deep fry in oil.
• Sprinkle some tandoori masala on all pakoras and serve them hot.

Chicken Waling Recipe


16 chicken breasts
1/4 cup gramflour
15 gms ginger paste
15 gms garlic paste
1 tbsp finely chopped green chillies
1 tbsp salt
2 tsp pepper powder
15 gms chopped spring onion
Breadcrumbs as required
Oil
3 tomatoes, sliced
A few sprigs mint leaves

How to make chicken waling:


• Mix all the ingredients, except breadcrumbs and oil, and apply to the chicken pieces.
• Roll them in breadcrumbs and deep fry in hot oil till done.
• Serve with tomato slices, garnished with mint leaves.
• Serves: 4

Papad Roll Recipe

Ingredients:

4 papad
4 potato (alu)
1 green chilly (hari mirch)
few coriander leaves (dhania patti)
1/2 lemon (nimbu)
1/4 tsp red chilly powder (lal mirch)
1/4 tsp spice blend (garam masala)
1/4 tsp sugar (chini)
salt to taste
1 tbsp gram flour (besan)
oil for frying

How to make papad roll:


• Boil and peel potato. Mash them.
• Finely chop coriander leaves and green chilies.
• Mix potatoes, green chillies, coriander leaves, red chilly powder, spice blend, sugar, salt
and lemon juice properly.
• Dip papad in water and take them out.
• Now roll potatoes into papad and role papad also.
• Seal the corners with gram flour batter.
• Heat oil in a pan and deep fry all papad rolls until they turn golden brown.
• Cut them into long pieces.
• Serve them hot with chutney and sauce.
Tandoori Chicken Chaat Recipe

Ingredients:

2 tandoori chickens, shredded


1 tblsp lemon juice
salt to taste
1/2 tsp chilli powder
1 tblsp oil
1/2 cup raw green mango (kachha aam)
1/2 cup onions, sliced fine
2 tsp green chillies, chopped
40 gms coriander leaves, chopped
2 tsp chaat masala
1 tsp ginger (adrak), julienned

How to make tandoori chicken chaat:


• To make the lemon dressing add together lemon juice with salt, chilli powder and oil.
Keep this dressing aside.
• Cut the raw mango into thin strips.
• Mix the raw mango strips, onions, green chillies, coriander leaves, chaat masala,
shredded chicken pieces and the lemon dressing well.
• Serve immediately, garnished with chopped ginger.

Prawn Pakora Recipe


Grinded prawns mixed with gramflour and garlic paste and then deep fried. Learn how to make

Ingredients:
1/2 cup prawns, shelled, deveined, washed and boiled
1cup gram flour
1 cup mustard oil
4 cloves garlic
4 green chillies
1 onion, chopped
1" piece ginger
2 tsp coriander leaves, finely chopped
1/2 tsp turmeric powder
1/2 tsp soda bicarbonate
1/2 tsp chili powder
salt to taste

How to make prawn pakora:


• Grind the prawns, onion, chillies, ginger and garlic in a food processor.
• Add a little water if needed.
• Mix the above paste with the gram flour, soda bicarbonate, turmeric and chilli powders
and salt.
• Heat the oil in a deep pan.
• Drop spoonfuls of the batter in the oil and fry till golden colour on both sides.
• Serve hot, garnished with the coriander leaves.

MUSTARD SAUCE RECIPE

Ingredients:

7 teaspoons salted butter


3 teaspoons flour
1 cup hot Water
2 teaspoons brown sugar
6 teaspoons Vinegar (Sirka)
9 teaspoons mustard powder
1/4 teaspoon Red chili pepper (Lal Mirchi)
1/2 teaspoon Salt (Namak)

How to make mustard sauce:


• Melt the butter and stir in the flour.
• Mix well and cook very gently without browning.
• Add water and stir till it thickens.
• Mix mustard in vinegar, add salt, Red chili pepper and sugar, and add to the flour stirring
well.
• Store the sauce in a jar.

GOAN FISH CURRY RECIPE

Ingredients:

1 lemon size tamarind


2 tblsp ginger paste
1 tblsp malt vinegar
2 pomfret fish
1/2 cup coconut scraped
6 red chillies whole
2 tblsp oil
2 green chillies
2 tblsp coriander seeds
1 small tomato
2 tsp garlic paste
2 tsp cumin seeds
salt to taste
1 small onion

How to make goan fish curry :


• Clean, wash and cut each fish into 5-6 pieces.
• Cut onions and tomatoes.
• Slit green chillies and cut into half.
• Roast cumin seeds, coriander seeds and whole red chillies.
• Make a fine paste of all the roasted spices along with scraped coconut, ginger and garlic
paste and malt vinegar.
• Heat up oil in a pan.
• Mix in cut onions and stir fry till golden brown.
• Mix in green chillies and cut tomatoes.
• Stir fry on a medium heat up for 3 minutes.
• Stir constantly.
• Mix in the paste and 11/2 cup of water.
• Bring it to a boil and then mix in fish pieces and salt.
• Stir fry on a low heat up for about 5 minutes or till fish is just done.
• Serve hot with steamed rice.

WHISKEY CAKE RECIPE


Ingredients:

4 Eggs
1 cup Oil
1 cup Sugar
1/2 cup Coffee
1 Shot Glass Whiskey
2 cup Honey
1 tsp Vanilla Essence
3 1/2 cup Fine Wheat Flour (Maida)
1 tsp Baking Soda
3 tsp Baking Powder
1/4 tsp Salt

How to make whiskey cake:


• In a mixer beat eggs, oil, sugar, whiskey, honey, and vanilla for three minutes.
• Then for 3 minutes at high speed.
• Sift the flour, baking soda, baking powder and salt.
• Slowly add the sifted flour in the mixer for 3 minutes at medium speed.
• Grease a 15 x 11 inch square pan.
• Pour the mixture in the pan.
• Baked the pan at 350 degrees for 1 hour and 10 minutes or till the tooth pick comes out
clean from the center of the cake.

chocolate, butter and coco.

Ingredients:

1/2 cup butter


1/2 cup saw milk
2 cup sifted all purpose flour
1/2 cup strong hot coffee
4 cup sugar
1/4 cup coco
1/2 tsp vanilla
2 cup brown sugar
2 arms unsweetened chocolate
2 egg yoghurts
1 tsp vanilla extract
1/2 tsp salt
2 egg whites
1 cup butter

How to make chocolate mocha cake:


• In a bowl beat 1/2 cup butter and add sugar gradually till it gets fluffy.
• Add in the melted chocolate and an unbeaten egg yoghurts, 1 tsp vanilla extract and sour
milk.
• Beat this mixture well.
• Add the sifted flour alternately with the hot coffee i.e. once you add the flour then you
add the coffee then you again add the flour then coffee continue till the flour and coffee
are finished.
• Now add the beaten egg whites.
• Preheat the oven at 350 degrees F and grease a 9x13 inch pan.
• Pour the prepared mixture into the pan and bake for 35-40 minutes.
• In a separate bowl beat half cup butter with powdered sugar, salt and coco.
• To this mixture add 1/3 cup strong coffee and 1/2 tsp vanilla.
• Mix it nicely and spread on the prepared cake and sprinkle some silvered
almonds

KERALA FISH CURRY

Ingredients:

400 gms fish pieces


1/2 cup chopped onion
1 tsp chopped ginger
2 tbsp tamarind pulp
1/2 cup coconut milk
1/2 cup fresh grated coconut
2 dry red chili
1 tsp red chili powder
1 tbsp soaked rice
1 tsp cumin seeds
2 tsp coriander seeds
1/2 tsp turmeric powder
2 tbsp oil
Salt To Taste

How to make kerala fish curry:


• Apply salt, turmeric powder and red chili powder to the fish pieces and keep aside for 15
minutes.
• Lightly roast cumin and coriander seeds. Mix with dry red chillies, soaked rice and grated
coconut.
• Grind it to a smooth paste. Soak tamarind in half a cup of hot water. Heat oil in a pan.
• Add chopped onions and chopped ginger. Cook on a high flame till onions are golden
brown. Stir in fish pieces and add 2 cups of water.
• Bring it to a boil. Stir in coconut and spice paste. Mash tamarind dissolved in water to
make a pulp.
• Strain and add to the gravy. Simmer for 2 minutes and finish with coconut milk.
• Add fish pieces and cook on a medium flame for 7-8 minutes or till the fish is done.
CHINESE CHICKEN WINGS RECIPE

Ingredients for garlic chicken wings recipe:

6 Chicken Wings
1 tbsp Ginger-Garlic paste
2 tbsp Flour (maida)
2 tbsp Con flour
2 Eggs (beaten)
1/4 tsp Pepper / Chili Powder
A pinch of sugar
Salt to taste
1 tbsp Soya Sauce
Oil for frying

Preparation of chinese chicken wings:


• In a bowl add Soya sauce, ginger-garlic paste, sugar.
• Add chicken wings coat well and set aside for 1/2 hour.
• Make a smooth batter by adding corn flour, all purpose flour, salt, pepper and beat in the
eggs .
• Heat oil in a wok / kadhai.
• Dip each wing in the batter and coat evenly and deep fry the drumsticks till golden
brown.
• Serve fried chicken wings hot with thin slices of onions and lemon.
