Pecan-Crusted Skirt Steak Serves 4 1 1/2 lb 3/4 cup 2 Tbs 2 tsp 1 1/2 tsp skirt steak, trimmed Kosher

salt and freshly ground black pepper pecan pieces cold butter, cut into small pieces honey roughly chopped fresh rosemary

Preheat a gas grill to high. Line a large rimmed baking sheet with foil and top with parchment. Arrange the steak on the baking sheet in a single layer and season both sides with 1 tsp. kosher salt and 1/4 tsp. pepper. Put the pecans, butter, honey, and rosemary in a food processor and pulse until well combined and the pecans are finely chopped. Spread the pecan mixture on the top side of the steak. Put the steak on the grill and cook until browned but still a little pink in the middle, about 4 5 minutes. Set the steak aside to rest for 5 minutes. Thinly slice the steak against the grain and transfer to plates. If the pecan coating falls off the steak as youre slicing it, spoon it over the top.
