Pan Fried Noodles

Preparation Time: 10 mins. Cooking Time: 5 mins. Serves 6.

Ingredients
3 cups Boiled Noodles 2 tbsp oil

For the vegetables


2 cups mushrooms (khumbh), sliced 1 cup green peas (parboiled) 1 tbsp garlic (lehsun), finely chopped 1 to 2 green chillies, finely chopped 3 to 4 tsp soy sauce 1 tablespoon cornflour mixed with cup water a pinch of M.S.G (optional) 2 tbsp oil
salt to taste

Method For the noodles


1. Heat the oil in a wok or large frying pan. 2. Spread the noodles and cook over a slow flame until the noodles are lightly browned at the bottom. Turn them over gently and cook the other side until the noodles are lightly browned.

For the vegetables


1. Heat the oil in a wok or frying pan on a high flame, add the garlic and green chillies and fry for a few seconds. 2. Add the mushrooms and green peas and saut them for a few minutes. 3. Mix the soya sauce, cornflour paste, Ajinomoto and salt and cook till the sauce thickens. Keep aside.

How to proceed
1. Transfer the noodles onto a serving plate and top with the vegetables. 2. Serve immediately.
