PASTA FAGIOLE Serves 8

1 pound ground beef 1 small onion, diced 1 large carrot, julienned 3 stalks celery, chopped 2 cloves garlic, minced 28 oz can diced tomatoes 1-15oz can red kidney beans (with liquid) 1-15oz can tomato sauce 1-15oz can great northern cannelloni beans (with liquid) 1-12oz can V-8 juice 1 T white vinegar 1 tsp. salt 1 tsp oregano 1 tsp basil tsp pepper package (1/2 pound) ditalini pasta tsp thyme Brown ground beef and drain. Add onion, carrot, celery and garlic. Saute 10 mins. Add remaining ingredients except pasta. Simmer for 1 hour. Meanwhile, boil a pot of water and cook the ditalini till al dente -about 5 min. Drain. Set aside. After soup has simmered 1 hour. Add ditalini to pot and simmer 5 min till pasta is heated through. PASTA FAGIOLE Serves 8 Samantha Dumas
