Learn about Cheese with Sheridans Cheesemongers

Class 1 (Wed 05/10/2011) Introduction to Cheese with Elisabeth Ryan
An introduction to how cheese is made, cheese made from the milk of different animals and the different cheese types found around the world, and in Ireland.

Class 2 (*Wed 12/10/2011) Irish Farmhouse Cheese with Kevin Sheridan


Kevin will speak about the history of Irish Farmhouse cheeses and elaborate on all the cheeses available now in Ireland as well as stories about the Cheesemakers and their cheeses. He will focus on the cheeses that have won prizes in their class in the Irish cheese awards to be held at end of September 2011

Class 3 (Wed 19/10/2011) David Tiernan of Glebe Brethan Cheese


David produces his fantastic raw cows milk cheese in Dunleer, Co. Louth. The style of his cheese is based on the French mountain cheese Comt. David uses the same cows, Montbelliarde breed in the making of his cheese. David will tell us all about his experiences as an Irish farmer and cheesemaker and well taste similar styles of cheese from France and Switzerland as well as different age profiles of Davids own Glebe Brethan. We will also get the chance to taste Davidss raw cows milk and compare it to regular commercially available pasteurised milk.

Class 4 (Wed 26/10/2011) - Cheese and Wine with Donal Flynn & Enrico Fantasia
Enrico Fantasia of Grapecircus wine, with whom we work in partnership to import a wide range of European wines will be looking at cheeses and wine matches. Donal Flynn will further examine these partnerships as well as looking at cheese matches with other interesting foods and ideas on how to make the most of your cheeses.
