Nigella's Buttermilk Birthday Cake 250g plain flour 1.

5 tsp baking powder 1/2 tsp bicarbonate of soda 1/4 tsp salt 200ml buttermilk (or 75g yogurt mixed with 125ml semi-skinned milk) 1.5 teaspoons of vanilla extract 125g soft unsalted butter 200g caster sugar 3 large free-range eggs Preheat the oven to 180C/350F/gas 4. Sift the flour, baking powder, bicarbonate and salt together and set aside. Pour the buttermilk (or yogurt mixture) into a measuring jug and stir in the van illa. Cream the butter and sugar together until light and fluffy then beat in the eggs one at a time. Gradually add the flour alternating with the buttermilk mix, one after the other , blending well after each addition until thoroughly mixed. Pour into the tin and bake for about 30 minutes or until well risen and pale gol den brown. She doubles the quantities for the Barbie tin/ pyrex bowl and bakes for an hour and it'll probably leave you with a bit of mix left over. I also used the single quantities to fill an 8inch tin and then sandwiched the two together.
