Artichoke Soup Ingredients 400 gm Fresh Artichoke 100 gm Boiled potatoes 40 gm Butter 2 tbsp Onion (small, chopped) 1 tsp

Garlic (chopped) 2 tbsp White roux (See page no ---40) 700 ml Vegetable stock 4 tbsp Single cream To taste Salt & white pepper Garnish: Method: 1) Wash artichoke and keep aside. 2) In a very heavy bottom saucepan, melt the butter until it begin to turn brown, then add onion, cook for a few seconds. Add garlic cook until golden brown in color. 3) Add artichoke and potatoes, saut for 4-5 minutes. 4) Gradually add the vegetable stock stirring all time. Bring slowly to boiling point add white roux cook over a moderate heat for 10 12 minutes or until artichoke became tender. 5) Remove from the heat put it in a food processor & make a fine puree. 6) Transfer to the clean saucepan; adjust the consistency of soup finish with cream cook for sometime at a simmering temperature. Add salt & pepper. 7) Serve hot in a soup bowl garnish with chopped parsley & fried artichok. Fried Artichoke
