Pepper Chicken recipe Ingredients 1 chicken cut to medium pieces (with skin removed) salt to taste 2 teaspoon(s) ginger

s) ginger and galic paste teaspoon(s) hot spice mix (garam masala) powder 1 tablespoons oil sprig curry leaves 2 large onions sliced 2 large tomato(es) chopped tablespoons fresh coriander leaves finely chopped To Grind without water 2 tablespoon(s) black peppercorns 1 tsp cumin 1 tsp fennel 4-6 dried chillies (depending on individual preference) 1 inch cinnamon stick 3 pieces cardamom 3 cloves

Method Marinate the chicken pieces with the grinded items, salt, half the ginger, garlic paste for at least 1 hour. Heat the oil in a heavy-bottomed pan. Saute the onions till golden brown then add in the curry leaves, ginger garlic paste and followed by the chopped tomatoes. Simmer for about 5 minutes. Add the chicken pieces, coriander leaves. Cover and cook on medium heat for about 12 minutes or till the chicken pieces are well cooked. If the chicken is not yet cooked and the gravy looks dry, add some hot water little by little as required whilst stirring if more gravy is required. Cover and cook on low heat till done. Serve hot garnished with coriander leaves and a sprinkling of freshly milled pepper.
