METHOD : 1. Prepare greased 24 cm diameter pie pan (pie form). 2. Roll 300 gr of pie dough and line it into the greased pie form, then put it into the refrigerator. 3. Peel and slice the apples, and then saute them with 30 gr of butter, 80 gr of sugar, vanilla essence, and lemon essence. 4. Disolve custard powder maizena with white wine in a bowl. 5. Pour in the apples and continously cook until the mixture is thick. (always stir using a wooden spatula during cooking) 6. Remove from the stove and add with biscuit crumbs, and raisins, blend it well. 7. Transfer to a tray and let it cool in the refrigerator. 8. Fill the apple filling into the prepared lining pie form. 9. Brush with egg wash the side of the pie (inner side). 10. Roll 200 gr pie dough and cover it on the apple pie. 11. Trim neatly the side of the apple using the back of small knife. 12. Decorate the side of the apple pie using pastry knife or fork. 13. Egg wash the top of the pie and sprinkle it with granuated sugar. 14. Prick (make many small holes using fork) on the top of the pie to prevent of swollen. 15. Bake in the oven 220C (dry) until the crust is goden brown. 16. Remove it from the pie form and put on the cooling wire (rack). 17. Cut into 8 sections and serve on the dessert plate. NOTE: Apple pie which served with vanilla ice cream is called apple pie ala mode. 2

STANDARD OF QUALITY: Apple pie should be good smell and the crust should be tender ( easy broken).
