Barrigas de Vieja (Old Ladys Tummies) Ingredients 1 lb. pumpkin, boiled and mashed 1 egg 5 T sugar 1/2 c.

all-purpose flour 1 t. ground cinnamon 1 t. vanilla 1 pinch of salt 1 pinch ground cloves Mix dry ingredients together. Then mix dry ingredients with cold, cooked pumpkin. Add egg and mix well. (You may add 2 or 3 T of flour if the mixture is watery.) Let rest 20 minutes in the fridge. Fry one tablespoon of mixture in oil until golden. Place fried dough on paper towel to drain and dust with a mixture of sugar and ground cinnamon. Barrigas de Vieja (Old Ladys Tummies) - Second Recipe Ingredients 4 C pumpkin, cubed (when cooked and mashed, should be approx. 2 cups) 1/2 c. all-purpose flour 1 c. brown sugar 1 t. ground cinnamon 1/2 t. salt 1/2 t. vanilla 1 egg, beaten Approx. 1 cup of oil for frying (depending on the size of the frying pan). Oil should cover dough halfway. 1. Steam cook the pumpkin. Mash cooked pumpkin with fork until smooth. In a deep bowl, mix the flour, salt and cinnamon and set aside. 2. Add sugar to the mashed pumpkin and mix with a soon. Add the dry ingredients to the pumpkin and sugar mixture. Finally, add the vanilla and mix until well-blended.

At this point, the mixture shouldnt be so hot. Therefore, add the beaten egg to the mixture and mix until all ingredients are well-beaten. 4. Heat oil. Add 1 T of mixture to oil and fry until golden (approx. 2 minutes). Turn dough over and fry until golden. Remove and drain. Serve immediately.
