endosperm of Cyamoposis tetragonolobus, leguminous plant called guar. Guar plant, also known as cluster bean plant is a leguminous crop grown mainly in India and Pakistan. Guar gum is referred by several names like Gomme de guar, Goma Guar, Guarkernmehl in various other countries. The hydration and water binding properties of guar make it an important product for use in ice cream stabilizers, particularly for use in high temperature and short time processes. The derivatives of guar like hydroxypropyl and carboxymethyl gum are used as water loss control, viscosity control, suspension, friction reducing, hydraulic fracturing and mobility control agents in oil, gas and petroleum industries.
