Rau qu ng mt vai tr quan trng trong ba n ca con ngi. QUI TRNH CNG NGH

Sn phm cha rng ri qui m cng nghip. Qui trnh cng ngh tng t qui trnh ti phng th nghim. I C c giai on c u n a sin c trong i mui c ua rau qu:

Mui chua ln men tri qua qu trnh ln men lactic hon ton . Qu trnh ln men lactic trong cc sn phm rau qu mui chua c th phn ra lm ba giai on. Giai on 1: sau 4h-5h, bt kh ln tn, vi khun bt u sinh tng hp, v chua nh, %vi khun < 1%.
