Take Early Bird PE Junior and Senior Year and Move some classes from Freshman and sophomore year to the junior and senior year. The core elect in the sophomore year can be moved to the junior/senior years to allow for another open or select elect the sophomore year. Consumer Ed can be taken through the American School (see your counselor) or in Summer School.
