But we also believe great beer knows no borders. When we traveled to Belgium to survey one of the Featured Brewery for the 2014 Festival: worlds most intriguing and respected beer cultures, we were awed by what we discovered. Michigans brewing revival has taken place largely within the last 20 years. Many of Belgiums small breweries have been in the Silly, Belgium same families for generations. We found the exact same spirit of dedication, craftsmanship, and enthusiasm among Belgians artisanal brewers that weve come to know and expect from their Michigan counterparts.
Brasserie de Silly
Also like Michigans craft brewers, Belgiums traditional family-owned breweries face an uphill battle against the international mass-production conglomerates which are squeezing them through massive ad budgets rather than better beer. The smaller breweries know they need to reach out to markets outside of Belgium if they are to survive. So the annual Ashleys Belgian Beer Festival was born to experience the world of Belgian beer. Weve brought to Michigan a wide range of amazing, boutique Belgian beers. Many are lesser known or were previously unavailable in our state. What youre not going to see at this Festival are Leffe, Hoegaarden, Palm, Stella, etc. as we want to focus (as we always do) on the craft brewers. This Festival is also pure Belgian beers. Although Michigan and American craft brewers are brewing Belgianstyle beers we are going straight to the source. Why have imitations when you can have the real thing?
There are several special events throughout the Festival. We have multiple brewers coming over from Belgium for the festival, if you speak Flemish or French, this is your chance to practice up. We hope you enjoy your time exploring the culture, cuisine, and, of course, the beers of Belgium at this Festival. It already ranks among the largest of its kind anywhere. In fact, we cant find any place in Belgium with this many of their beers in one place. Please let us know what you like, as well as what you would like us to do better. Mussels
Mussels or moules are the national seafood dish of Belgium. Traditionally they are served in a large steaming pot of savory broth with a side of Belgian frites and homemade mayonnaise. The trick to eating mussels like the Belgians is to use a discarded shell as a spoon to scoop out the plump little delicacies and of course the flavorful juices. All of our mussels are steamed in beer. We recommend a glass of the beer they are cooked with.

BRASSERIE DE SILLY Brasserie de Silly, a six generation independent family brewer, is located South West of Brussels in the Hainaut Province of Wallonia. Silly is a little dormant farming village just outside the old city of Enghien, once world famous for its tapestries. Larger farms used to have their own breweries up to well into the 20th century. For centuries on the Western side of Wallonia, the large farms of Hainaut were cultivating barley and hops and they all brewed their own beer. Today, the cultivation of hops has disappeared and the brewing activity became an independent activity. Brasserie, Lionel Van Der Haegen which is the french word for brewery, de Silly is a perfect example of this Brasserie de Silly evolution. The written history of the Brasserie de Silly starts in 1850, when Nicolas Meynsbrughen bought the farm and started to keep records on his brewing activities. On this farm was also the local mill, where all kind of local grown grain was milled. During WWI the brewery painted the copper tuns black to look like wrought iron to hide them from the Germans, who could use this material in their war machine. Right after the war a Scottish regiment of the British army, choose this brewery to brew for the occupying forces. A strong German dry and hoppy characteristic was clearly present in some of the breweries beer, since the Enghien area has been ruled by German nobility for over 500 years. The Scots brought the rich tradition of their own Scottish ales. This combination of three beer cultures, Belgian, German and Scottish, is the reason for the outstanding quality and uniqueness of Sillys beer. Besides the Double Enghien, and the Scotch de Silly, the brewery brews a few other remarkable beers: La Divine Triple, a Belgian WIT named Titje, a great Saison, and its own lager. The farming activities were stopped around 1950 and all efforts were concentrated on the brewery. In 1973 the brewery changes it name into Brasserie de Silly, but keeps the logo of St. Michel, the angel who fights dragons. This Saint has his statue in the Church of Silly, and is also depicted on top of the Brussels City-hall. You do not find the picture of the Saint on the cap of the bottle, but the picture of a land worker. In 1975, the brewery of Enghien (say engine), a town near Silly, was bought by the Brewery de Silly. The brewery of Enghien was famous for its Double Enghien Blonde (Golden) and Brune (Brown). After the acquisition, these two beers are brewed in Silly. Brasserie de Silly brews about 200 times a year for a total of around 35,000 barrels of beer. The malts come from Belgium and from France. The hops comes from Kent (UK) and from Saaz and Hallertau in Germany. Approximately, 60% of the production is top-fermenting ales. This puts the Brasserie de Silly with the top Belgian microbreweries. They brewed the Titje WIT since 1990. Today, Lionel Van Der Haegen and his cousin Bertrand Van Der Haegen, Brewmaster mange all operations of the brewery with help from their Dads, Didier and Frances Van Der Haegen.

Dubuisson, the maker of the Scaldis line of premium Belgian beers, has been brewing continuously since 1769before Belgium was a country and longer than the Trappist breweries. Dubuisson is a shining example of the civic brewer and proud protector of the tradition. Hugues Dubuisson is the eighth- generation family member to direct the business, which is thriving. U.S. sales increased at twice the rate of the dynamic domestic Marc Lemay of Brasserie Dubuisson of Pipaix, Belgium craft beer rate. Both Peche Mel and Scaldis earned Gold medals will be visiting with guests those enjoying a special dinner in World Beer Championships this past year. Prestige has main- featuring Dubuisson beers on Saturday February 15, 2014 tained perfect 100s on RateBeer. Dubuisson is in the hamlet of Pipaix, just outside Tournai and in the heart of French-speaking Wallonia. The province where Scaldis is brewed is called Hainaut. The word means land of groves and indeed it is the richest agricultural province in Belgium. Jim Galligan of the Today Show recently published a superb review of Scaldis Prestige de Nuits: Prestige de Nuits pours a deep amber red with a lovely cream-colored head. The beer we sampled had lots of small dregs floating about the glass, but it had recently been in Johns car, so things were stirred up a bit. This wouldnt have been an issue if we had let sit for a while before opening, but none of us wanted to wait. Can you blame us? The nose is a bit sneaky on Prestige de Nuits, as it reveals only a small part of the beers true character. You get a bit of the Burgundy from the barrel, as well as some cherries, a waft of toffee and hint of alcohol, but it doesnt really prepare you for the rush of flavors that follow. Take a sip and this beer makes an immediate impression on your palate. The flavor starts off very vinous and slightly sour, evocative of port wine and dark dried fruits. These wine-like characteristics give way to richer notes of chocolate and cherries, with a little oaky vanilla and just a hint of spice dancing in the background. Trust me, your toes will curl in pleasure. As this rich middle recedes, youre treated to a sweet and dry finish, with flavors of red raspberries and slightly tart grapes. Prestige de Nuits warms your chest as it goes down, but you wouldnt guess this beer is 13% alcohol by volume, as the booziness is very well masked. A good beer will have a beginning, a middle and an end that all flow in harmony and offer distinct, individual pleasures. A truly special beer will provide an odyssey of flavor, with each part of its taste being a journey onto itself. Prestige de Nuits falls into the latter category it is a truly remarkable fermented beverage, one to be savored. Dubuisson is a member of the Belgian Family Brewers The members of the non-profit association are Belgian breweries which have been brewing beer in Belgium for at least 50 years non-stop. Together they represent 15% of Belgian brewers, with a total of more than 3,500 years of experience in traditional beer brewing.

You may not think that beer and chocolate go together. But Belgian beers do pair well not only with savory foods but also sweets. Their rich malt flavors and very mild hop bitterness compliment sweet desserts and chocolates. For the festival we contracted with Schakolad Chocolate Factory in Ann Arbor to create some exclusive chocolates not only to pair with beer but made with beer. They made a rich ganache center for their truffles with bittersweet chocolate, heavy cream and four different beers. The ganache centers were then covered with either Milk or Dark chocolate. Schakolad was blown away and said they were some of the best chocolates they had ever tasted. For Ashleys Belgian Beer Festival we have obtained special permission to use beer branded glassware (normally not legal in Michigan). This is only valid February 6 - 16. Ashleys went through a lot of trouble to get this exception, please respect your fellow guests and do not take any glassware home (you could be charged with a liquor violation and fined). Most glasses are either 25cl or 33cl with room for a very ample head (which is important to Belgian Brewers). Enjoy Belgian beers in the proper glassware (when available) and let others do so as
Appears light to deep gold in color. The flavor is initially smooth with light to moderate Pils malt sweetness, but finishes medium-dry to dry with some smooth alcohol becoming evident in the aftertaste. Medium hop and alcohol bitterness to balance. May be spicy or earthy and has a very soft yeast character. History: A relatively recent development to further appeal to European Pils drinkers. Appears dark amber to copper in color, with an attractive reddish depth of color. The aroma of the beer gives way to the flavor: rich, complex medium to medium-full malty sweetness on the palate, yet finishes moderately dry. Complex malt, ester, alcohol and phenol interplay (flavors of raisin are common, as well as dried fruit flavors, and potentially clove-like spiciness). Balance is toward the malt. History: Originated in monasteries in the Middle Ages and revived in the mid1800s. Appears deep yellow to deep gold in color. The tripel is a union of spicy, fruity and alcohol flavors that are supported by a soft malt character. Low to moderate phenols are peppery in character. Scent is citrusy, often orange or lemon. Alcohols are soft, spicy, and often a bit sweet and low in intensity. Substantial carbonation and bitterness lends a dry finish with a moderately bitter aftertaste. No diacetyl. History: Originally popularized by the Trappist monastery in Westmalle. Appears yellow to medium gold in color. Flavor is a combination of fruity, spicy alcohol flavors supported by soft malt character. Scent is reminiscent of pears, oranges or apples. A low to moderate spicy hop character is often present. Bitterness is typically medium to high from a combination of hop bitterness and yeast-produced phenolics. Substantial carbonation and bitterness lends to the dry finish with low bitter aftertaste. No diacytel. History: Originally developed by the Moortgat brewery after World War II as a response to the growing popularity of Pilsner beers. Appears deep amber to deep coppery-brown in color (dark implies that it is darker than golden). The aroma is indicative of the flavor. Moderately malty and sweet with a variable finish, depending on the interpretation of the style: it may finish dry or sweet, few being slightly bitter. The complex and varried flavors should blend harmoniously. History: Most versions are unique in character reflecting characteristics of individual breweries. Grand Cru is a term that is borrowed from vintners (the wine world) and refers to a special offering, release and/ or vintage dated selection. The term was coined by Pierre Celis when he labeled his annual release the Celis Grand Cru and in Belgium, it was a stronger version (with additional spicing) of his regular witbier that was only brewed for special celebrations.
Expect this beer to be a deep red, burgundy to reddish brown color with average to good head retention. It maintains an intense fruitiness, commonly including plum orange, black cherry or red currant flavors. A mild vanilla and/or chocolate character is often present. Spicy phenols can be present in low amounts for complexity. Sour, acidic character ranged from complementary to intense. An acidic, tannic bitterness is often present in low to moderate amounts and adds a red wine-like character. Diacetyl is perceived only in very minor quantities, if at all, as a complementary flavor. History: The indigenous beer of West Flanders, typified by the products of the Rodenbach brewery, but reflective of earlier brewing traditions. It is aged for up to two years, often in large oaken barrels which contain the resident bacteria necessary to sour the beer. Appears as dark reddish-brown to brown in color. It tends to be malty with fruity complexity and some caramelization character. Fruitiness commonly includes dark fruits such as raisins, plums, figs, dates, and black cherries. A malt character of caramel, toffee, orange or chocolate is also common. Spicy phenols can be present in low amounts for complexity. A slight sourness often becomes more pronounced in well-aged examples, along with some sherry-like character, producing a sweet-and-sour profile. The sourness should not have a notable acetic/vinegary character. History: An old ale tradition, indigenous to East Flanders, typified by the products of the Liefman Brewery. It was historically brewed as a provision beer that would develop some sourness as it aged. It is not aged in oak. It will appear pale yellow to deep golden in color, but age tends to darken the beer. Young examples are often noticeably sour and/or lactic, but aging can bring this character more in balance with the malt, wheat and barnyard characteristics. Fruity flavors are simper in young lambics and more complex in older. Served uncarbonated. History: Spontaneously fermented sour ale from the area in and around Brussels stem from a farmhouse brewing tradition that is several centuries old. It is typically not found in bottle form, but may be found on draught in and around Brussels from traditional brewers such as Cantillon, Drie Fonteinen, and Giardin. Appears golden in color. A moderately sour/acidic character is classically in balance with the malt, wheat and barnyard characteristics. A low, complementary sweetness may be present But higher levels are uncharacteristic. While some may be more dominantly sour, balance is the key and denotes a better gueuze. History: See Straight Lambic. Geuze is traditionally produced by blending one, two, and three-year old lambic. Young lambic contains fermentable sugars while old lambic has the characteristic wild taste of the Senne River Valley. Gueuze is served with carbonation. (Can also be spelled Geuze) Appearance is generally determined by the variety of fruit, although a lighter colored fruit may have little influence on the color. The flavor of the fruit added to the beer should be evident. A sour and acidic character are often present. As it ages, the flavor of the fruit will fade and the flavor of the lambic will dominate. History: See Straight Lambic. Not to be confused with the more recent development of untraditional fruit lambic in which the fruit is added post-fermentation as opposed to the traditional addition of fruit half-way through aging the lambic. The addition of fruit after fermentation gives way to a sweeter drink because the yeast does not ferment the sugars from the fruit. The most common fruit flavors used include framboise (raspberries), kriek (cherries), and druivenlambik (muscat grapes). Overly sweet lambics (Lindemans), may be categorized as Belgian Specialty.

This beer has a lightly scented aroma, followed by a subtly bitter taste. It leaves a light raisin fruitiness on the tongue and ends with a pleasantly bitter tonic upon swallowing. Belgian Pale Ale. Brasserie de Silly. 6.5% abv. 25cl 7.50 / 12cl 4.00
A traditionally-brewed Flanders brown ale is blended with 18-month old lambic to create this tart, refreshing, medium-bodied benchmark ale. Reddish-amber with a tan head. Hints of tart fruit and an underlying light lambic sourness dominate the nose. 5.5% abv 750ml 17.00 A special reserve from Kerkom. Dark, rich, warming. 13% abv 750ml 26.00
Armand Hoppy
Very aromatic due to its dry-hopping usage of the American hop Cascade where the nose is fruity with grapefruit and citrus and the taste is dominated by well-balanced hop notes. Ufiltered ale, 7% abv. and is slightly hazy. 750ml 11.00
Bavik Pils*
The beer displays a round malt trait with a slight buttery touch that remains gentle in the middle, where the spiciness of the hops takes over. 5% abv. 4.00 (pint)

A very rich taste, coming from the six different kinds of malt. These malts also give it that rich, dark, nearly black colour and flavours of berry and a hint of chocolate. The royal doses of Challenger and Saaz hops bring the typical balance between sweet and bitter. 9% abv 750ml 23.00 bears no resemblance whatsoever to any Tripel you may have sampled, except in color perhaps. It is very hoppy and malty. 8.5% abv 750ml 23.00 A blonde beer brewed according to the ancient Saison tradition of the province of Hainaut. This beer is brewed exclusively with natural ingredients: artesian water, barley and wheat malts, liquid sugar, hops and yeast. The result: dry, hoppy, fruity and slightly veiled beer. No herbs or spices are used to create the fruity and spicy profile, which is unusual for a saison. Brewery de Glazen Toren. 6.9% abv. 750 ml 25.00

Gandavum Blond
An extraordinarily dry and herbal blond beer. Gandavum is unfiltered, made with all (pilsner and Munich) malt, hopped with Tomahawk and Willamette, and dry hopped with Willamette. 7.5% abv 750 ml 13.00
Duvel Blond
Guaranteed not fresh! Duvel goes through an unusual triple fermentation process that takes three years or so. Duvel actually gets better in the bottle. The draft is the same product as Duvel bottles except the draft does not get the third fermentation (bottle conditioning). 8.5% abv. 11.2 oz 7.25

Lambrucha Sour
Lambrucha combines hand-selected house Lambics that are a minimum of one year old, and specially brewed organic Belgian kombucha. A lemony sourness greets the palate but is quickly replaced by even more refreshing flavors of pine, mint, rosemary and cedar. 3.5% abv 750 ml 23.00

Malheur 12 Quad
a dark brown ale with beautiful and rocky caf latte light brown foam. The flavour is malty and cereal and might invoke thoughts of fresh cut bread. The taste of Malheur 12 is full, round, with a touch of sweet alcohols, but the ale is still dry and bitter coffee, with touches of nuts, honey and rum from the brown candy sugar. The aftertaste is bitter-sweet, long and warm. 12%abv 11.2oz 8.50
McChouffe* Dark
Inspired by the potent and rich brews of Scotland, it boasts a complex sweet malt profile, a deep brown body, and notes of hop bitterness. Brasserie DAchouffe. 8% abv. 25cl 7.50/ 12cl 4.00
Orval Trappist
Wonderful complex aroma, consisting mainly of ripe bananas and cloves. Also detectable are fresh sliced green apple, dried fruit (maybe raisin or plum), and spicy hops. Clove also floats around sporadically. Very carbonated mouthfeel. A medium body, but fruity, spicy and complex. 6.5% abv. 11.2 oz 11.00
Lucifer* Blond
Pours clear and golden yellow with a lasting and lacing full white head. The aroma of yeast carries into the flavor with slight metallic and spiced accents. 8% 25cl 7.75 12cl 4.00

Piraat* Triple
Strong ale like Piraat was highly prized by seafaring captains in the 17th and18th centuries. The daily distribution of a pint of this ale kept the pirates in good health and good spirits. A wickedly rich and rounded brew that packs a might punch. Mild sweetness, reminiscent of bread dough with spices and tropical fruits. Brewery Van Steenberge. 10.5% abv. 25cl 7.50 / 12cl 4.00

Aged in a Bordeaux cask. 9% abv 750ml 25.00 ($13 carryout) Seef is hard to describe. Its effervescent, full-bodied, nicely finished. It has fruity, wheat beer-like notes in the nose and palate, but it also has a beguiling earthiness. Moderate hops nevertheless leave Seef dry. 6.5% abv 11.2oz 7.25
Sloeber Blond
Sloeber is the Flemish name for an epicure, somebody who likes the good things in life in a somewhat naughty way. Sloeber golden ale has a malty nose, rather hoppy and dry on the palate with hints of orange. Full of character, it is one of the best examples of the Belgian strong blond ales. 7.5% abv. 11.2oz 7.25

Witkap Singel is the lightest of the Trappist style beers and is typically drunk at the midday meal. A blond beer that sparkles like champagne, it has an extremely estery nose with typical abbey notes of banana and berry. Unusually, this is followed by a light body and lemony finish. 6% abv. 750ml 16.00 Charming character, smooth taste and a unique, delicious aroma. Light in alcohol with crisp and refreshing flavor. Its a gold colored Ale with very white dense foam. The aroma has some elements of vanilla, white pepper and some fruity notes. The after taste has notes of peach, nectarine and a nice hoppy balance is present. 7.4% abv 25cl 7.50/ 12cl 4.00
