ABSTRACT
These days, having a beautiful body and a good health are big desire of many people.
Despite of doing exercises and dieting, people still cant achieve their goal. Instead, there
is an increasing in health disease and weight surplus. Therefore, researchers have studied
and analyzed a part of the cause as well as suggestions a replace diet method that could
help people lose weight easily and prevent some disease like obesity, heart disease etc....
To complete this study, a number of support tools such as ProQuest and Google Scholar
were used to bring more useful information to the reader and subsequent studies. Besides,
researchers also refer to some previous researches in order to understand clearly. In this
study, we come to conclusion that eat food contain starch or carbohydrate is the reason of
body weight increasing, high blood sugar, liver disease, obesity and atherosclerosis etc....
The targets of this study are Vietnamese dieters from 18 to 40 years of age. Then,
discussed ways to solve these problems by recommending solutions to dieters to meet
their need.

CHAPTER 1: INTRODUCTION
1.1. Background
Nowadays, food is getting more diverse but many of them are not good for your health,
your body. Moreover, eating illogical may cause a lot of health disease. For example,
heart disease, liver disease, obesity and atherosclerosis etc. According to that, in this
research paper a method was brought to help the readers not only feel free in eating but
also improving health and body. It is low carbohydrate diet or known as DAS diet in
Vietnam.
1.2. Objectives
This research is made for people who have wrong eating method, have problem with their
health or people just want to lose weight effectively.
1.3. Scope
Due to limited time and small scale of the research, researcher only concentrates on
studying the low carbohydrate diet or DAS diet in Vietnam. Vietnamese people from 18
aged to 40 aged are main research target. And to ensure the accuracy of the study, the
period among 2012 to 2014 was chosen. Issues related to 3 other things above are beyond
the scope of this study.
1.4. Outline
This study is divided into five parts. The first part mentions the introduction followed by
the literature review. Methods and materials of research will be focused on part three.
Part four concentrates on discussing the low carbohydrate diet results. The final part is
conclusion. And we will come to the conclusion in final chapter.

CHAPTER 2: LITERATURE REVIEW
2.1. Definition of carbohydrates

Carbohydrates are the main culprits cause excess fat in the abdominal area and sweets
cravings. Carbohydrates and fats are the two main energy source of the body. With the
completely removed energy from carbohydrates, the body will begin to draw energy by
burning excess fats in the body for daily activity (Nguyen, 2011).
When eating carbohydrates into the body. Carbohydrates will immediately turn into
blood glucose, impact and make blood sugar increase. The body immediately reacts by
secreting insulin to "pull" your blood sugar levels stable and converting blood glucose
becomes fat in the body area.

2.2. Benefits of low carbohydrate diet
Recently, low carbohydrate diet content has become a matter of international attention
because of the WHO recommendations to reduce the overall consumption of sugars and
rapidly digestible starches. This can be found in the book Low-carbohydrate diets:
nutritional and physiological aspects (A. Adam-Perrot, P. Clifton and F. Brouns, 2006) in
this book they mention that low carbohydrate diet acutely induce a number of favorable
effects, such as a rapid weight loss, decrease of fasting glucose and insulin levels,
reduction of circulating triglyceride levels and improvement of blood pressure. Also in a
report published by The New England Journal of Medicine show that a low carbohydrate
diet is a feasible alternative to a low fat diet for producing weight loss and may have
favorable metabolic effects (Iris Shai, R.D. et al for the Dietary Intervention Randomized
Controlled Trial (DIRECT) Group, 2008). Similar to these documents, a studys result in
the book Safety of low carbohydrate diets has show low carbohydrate diet are likely
effective and not harmful in the short term and may have therapeutic benefits for weight-
related chronic diseases (T. C. Crowe, 2005).
2.3. Suggestions to Vietnamese in doing low carbohydrate diet.
In Vietnam, the compliance regime of low carbohydrate diet will be a little different than
in the West. Because of the Vietnamese meal contain a lot of starch such as rice, noodles,
tofu (high carbohydrate ratio) etc.... So cutting entirely this type of food above is not
feasible. Instead, the low carbohydrate diet has been converted to more appropriate for
Vietnamese people. And Vietnamese dieters called it DAS diet.
The Traffic Lights rules of DAS diet (Nguyen, 2011) mention that Green light food such
as green vegetables, spices, and vegetables contain less starch, meat, egg, seafood, Coca
light, Pepsi light etc... is allowed to eat comfortably without ever having to calculate
carbohydrate. Yellow light are kinds of food must eat under a certain amount like cheese,
tomato, onion, carrot, copra, coconut milk (kind of a light, less sweet) etc. depend on
the fat reduction speed of each individual. And Red light food needed to eat as less as
possible. For example, rice, corn, potatoes, cassava, rice, bread, sugar, milk, cakes,
sweets, noodles, potatoes and most of the fruits etc.
Keep eating DAS diet follow the structure 5 days low carbohydrate - 2 days high
carbohydrate (normal meal) to have a good health and a beautiful body.

During the first 3 days, the body will experiment some small changes such as
psychedelic, dry mouth, fatigue, headache, dizziness. But a few days later your body will
gradually return to normal.

CHAPTER 3: METHOD AND MATERIAL
3.1. Methods
The data were collected through both primary and secondary research and this paper was
analyzed by quantitative method. The process of this research was followed several steps.
Firstly, the studys author selected the topic, and then collected data. After that,
questionnaire was designed to interview 18 to 40 aged Vietnamese who are doing low
carbohydrate diet, to gather primary data. Subsequently, all collected data was digitized
handled by employing Microsoft Excel 2007 to draw the figures and tables to illustrate
benefits that low carbohydrate diet actually bringing. Following this stage, statistical
numbers were analyzed and synthesized in depth to give the results. Finally, researcher
based on yielded results and findings to discuss some proposed suggestions.
3.2. Material
This research focuses on exploring the benefits in low carbohydrate diet that are
considered good for health. Hence, in the study process, researcher conducted empirical
evidences by using questionnaire to survey and get information and data from people
from 18 to 40 aged. This questionnaire includes 2 parts: the first part is personal
information and the second two is questions which are optional questions and yes-no
questions. The participants comprise 50 males and 50 females, and they are people who
are eating follow the low carbohydrate diet. These forms were sent to online participants
through Google docs. The survey process was conducted during 5 days (23/06/2014 to
27/06/2014). Besides that, in order to make this paper more persuasive, the author also
consults online books, previous studies, Google Scholar and online journals in ProQuest
Central database as well as low carbohydrate diet website.

3.3. Overview
Low carbohydrate diet or low carb diet are dietary programs that restrict carbohydrate
consumption, often for the treatment of obesity which you can find in a related study
(Guenther Boden, MD et al, 2005). Food which is easily digestible carbohydrates (e.g.
sugar, bread, rice) are limited or replaced with food containing a higher percentage of fats
and moderate protein (e.g. meat, poultry, fish, shellfish, eggs, cheese, nuts, and seeds)
and other foods low in carbohydrates (e.g. most salad vegetables), other vegetables and
fruits (especially berries) are often allowed. The amount of carbohydrate not allowed
varies with different low carbohydrate diet.
The term "low carbohydrate diet" is generally applied to diets that restrict carbohydrates
to less than 20% of caloric intake, but can also refer to diets that simply restrict or limit
carbohydrates. Low carbohydrate diets are used to treat or prevent some chronic diseases
including cardiovascular disease, metabolic syndrome, high blood pressure and diabetes.
Summer 2009 is the official time of spreading ideas, new knowledge of nutrition and low
carbohydrate diet in Vietnam or was known as DAS (Dr.Anhs Secret) diet. First are
some articles about low carbohydrate diet (Based on Atkins Diet) by Nguyen Hoang
Anh. After more than one year and a half spreading and developing in Vietnam, low
carbohydrate diet has helped thousands of people successfully lose weight regain
confidence in life, besides a lot of patients with diabetes, high blood pressure, gout etc.
have come to low carbohydrate diet and also regain health as well as their physique.
DAS diet is considered as inherit, synthesis and develop the unique values of some
famous low carbohydrate diets in the world, such as the Atkins Diet, the Anabolic Diet,
Ketogenic Diet, Caveman Diet. Moreover, the basic philosophy of DAS Diet is: If a diet
method is not appropriate to dining culture and daily life, it will definitely fail. Hence,
DAS Diet is officially considered as the low carbohydrate diet for the Vietnamese.

CHAPTER 4: ANALYSIS
4.1. Strengths
Low carbohydrate diet is an effectively way for people who want to lose weight
(Westman et al, 2001), want to get a nice body and want to have a good health. Base on
low carbohydrate diet, dieters will not be worried about what to eat, how many is
appropriate or does that food good for health, etc. It cuts out the large amounts of
starches and sugars that have crept into our diets and now make up most of what we eat.
It isnt normal or natural for humans to be consuming the large quantities of refined
carbohydrates that we indulge in today. To the body carbohydrates, particularly simple
refined carbohydrates are essentially sugar, such that after eating a high carbohydrate
meal blood sugar levels rise, triggering the release of insulin, a hormone which acts to
bring blood sugar levels back to normal. These higher levels of blood sugar, repeated
spikes in blood sugar following high carbohydrate meals and greater levels of insulin are
thought to cause the body to function sub-optimally, promoting diseases such as type 2
diabetes, atherosclerosis (fatty blood vessels), coronary heart disease and possibly even
cancer. Compelling research also suggests that these types of carbohydrates are
associated with weight gain and obesity.
4.2. Weaknesses
In the short term, most people lose weight very quickly on low carbohydrate diet. When a
normal diet is resumed weight quickly returns, but mostly as fat (Kirschenbaum, 2005).
Many side-effects of low carbohydrate dieting include: nausea, dizziness, dehydration,
bad breath, constipation, etc. To afford low carbohydrate diet in long term is not an
easy thing because of the cost of food is more expensive than usual.
4.3. Opportunities
Low carbohydrate diet has become increasingly popular for weight loss. Many famous
people in the world are now using low carbohydrate diet as a good way to have a nice
body and to have good health such as Victoria's Secret Angels. Some of gym center also
apply low carbohydrate diet for their members. Results from individual clinical trials and
studies suggest that there is insufficient evidence to make recommendations for or against
the use of low carbohydrate diet.

4.4. Threats
Low carbohydrate diet tends to be high in saturated fat. This may increase risk of heart
disease (Gary D. Foster, Ph.D. et al, 2003). Many scientists had studied and showed that
low carbohydrate diet is bringing more diseases to dieters. They also mentioned that low
carbohydrate diet was an illogically method and had bad effect in long term.

To make the readers know more about effects of this kind of diet, researcher has
made an online survey to collect values. Because of some limitations, the research was
performed mainly in 100 people. The subjects of this research were DAS dieters
(Vietnamese low carbohydrate dieters) from 18 to 40 years old. The instrument used in
this research was questionnaire.

As you can see, there are a difference in gender and age of Vietnamese dieters. Most of
dieters are female it show clearly in the numbers of female dieters with total sixty five
people while male dieters only take twenty nine people. Other, we can see there is a small
group of people out of 18-40 years old. So we can conclude that female has tended to diet
to take care of their beauty. Male seem to dont care much about their weight.

The pie chart illustrates that the number of people who have experience DAS diet and
feel about the change of their body. Most of people feel very confidence confidence,
that mean they are satisfied about what DAS effects to their body. And 20 people feel
normal so we can sure that till now DAS not bring any negative effect to human body.

Its clearly that most of dieters (73%) had done some kinds of different diet before started
DAS diet but its over at present. Only 27% of them are first time come to a kind of diet-
DAS diet. In a different question, 73% of dieters answered that the method they quit isnt
effect much. So it doesnt last long about 1 or 2 months.

The table shows that the number of people who encounter some usual problems during
DAS diet process. Base on these results we can see the majority of dieters feeling fine
about DAS and doing it well. Otherwise, the rest of them have some problems and need a
little help with DAS diet. For example, 28 people feel difficult when follow DAS diet.
They see its hard to cook some DAS meal without some spices that were prohibited in

the Traffic Lights rules etc while 33 people dont know much about DAS and what-to-
do to get the best result from eating DAS. But the worst is there are 13 people that quit
doing DAS diet. Not every diet is fit to everyone and 13 people can be a proof of this
situation.

In this figure 4, we let dieters choose multi-answers for any effect they are expecting. All
of them are wanted to have beautiful and healthy body when following DAS diet. While
72 people having problems with weight. And just 45 people are get health trouble such as
obesity, high blood pressure etc that need eat DAS to improve health. It proves DAS
diet can be a good diet method and we can count on it.

doing DAS under 1 month, 82 people are from over 6 months to over 1 year experience

DAS. And a part of them about 18 dieters are over 3 months with DAS. Its easy for us to
see DAS diet can hold dieters in a long time and it seem like dieters are not intend to stop
eating DAS soon.

This table shows effects and changes after 3 months doing DAS diet of 100 dieters. The
results are separated in 2 issues weight loss and health disease improvement. In weight
loss, 77 people are losing at least 3kg after 3 months while 23 people are losing less than
1kg. For health disease improvement, DAS was helped 58 dieters remission in heart
disease, obesity etc. 42 people feel normal about their health, mean nothing goes bad
when they eat DAS.

Suggestions about doing low carbohydrate diet more effectively
In this chapter dieters will know more about DAS diet method that will help them loss
weight at least 4kg for 3 months, only if they follow these terms.
This model of diet is most appropriate for Vietnamese people from 18 to 40 aged.
Eat whenever feel hungry.
Do not use diet food sold outside the market when applying DAS.
Do exercise about 30 minutes per day through HIIT method (HIIT method is
simply moving body follow the speed of the music beat) to stimulate the fat
burning process.
In DAS process, whenever dieters get the weight they want, they can do DAS
follow the structure 5 day do DAS diet and 2 day eat normal. It will help dieters balance
fat and carb in body and prevent some decease.
Dieters must follow the Traffic Lights rules
a. Red light food that is not allowed to eat. Rice, corn, sweet potato, cassava, rice,
bread, sugar, milk (sugar free and sugar), cakes, sweets, noodles, potatoes etc ... milk
(sugar free and sugar) had very high levels of lactose. Cream can be used to replace the
types of milk and try selecting the type of fat cream as high as possible. Especially, heavy
cream contains 60% fat.
All nuts like peanuts, cashew nuts, sesame, green bean, soy etc.... Of course, some seeds
like sesame or peanuts if we just sprinkled on food to have flavor, you can eat between
50 -100 gram no problem at all. There are several types of edible nuts with moderate
amounts will be talked more closely below.
All kinds of fruits are not allowed to eat (at least within the first 2 weeks).
All kinds of fast food (McDonald's, KFC etc....).
Some type of starchy vegetables like beans and bean products, pumpkin etc.... (Except
cowpea is light green and tofu is Yellow light).
beer and wine.
b. Yellow light are kinds of food must eat under a certain amount. Cheese (not more
than 200grams/day).

Tomatoes 300grams/day, onion and carrot every day about 400grams. Copra 200-300
grams/day, coconut juice (light, less sweet) 200-300 ml/day. Dieters can eat macadamia
nuts about 100-200 grams/day.
Lemon (Green light) and passion fruit (Yellow light) 3-4 drinks per day blended with diet
sugar. Strawberries, raspberries, avocados can eat 300 grams/day. Eat beans every day
about 200 grams. Sugar free gum - Xylitol 10gums/day
Noticed that only using one type of Yellow light food per day.
c. Green light food are kinds of food you can eat freely such as all kinds of meat (fat
or not arbitrary), animal viscera.
All kind of animals egg.
All types of oil (olive oil is recommended). Dieters can eat vinegar has color as
transparent water. Do not eat colored fruits vinegar.
Butter (not margarine) should eat butter (fat content as much as possible).
Seafood, fish, shrimp, squid etc....
Coca light, Pepsi light, green tea, pure black coffee (can replace condensed milk with
high fat whipping cream and diet sugar).
Eat green vegetables comfortable. Cabbage, zucchini, chayote, kohlrabi, okra, eggplant,
cucumber, celery, leeks, bamboo shoots, centella asiatica, artichoke, seaweed, bean
sprouts, mushrooms etc .... Eating freely without thinking.
Spices like seasoning, seasoning salt used for cooking etc.... (pay attention to components
behind must be no starches and sugar - for example, Knorr seasoning salt is not allowed
because it contains many starch and sugar). All the curry spices, cinnamon etc.... as long
as no sugar and starch is ok.

CONCLUSION
These days, diet is a part of beauty making of many people. People diet for many reasons
such as lose weight, have good health, have beautiful body or just because they want. But
not every diet method is effective, wrong diet method will lead to a lot of harms. For that
reason, researcher has studied on many diet method and has found out a method could
help dieters freely in eating, having a nice body and improving health. That method is
low carbohydrate diet.

When choosing topic for this research, it was supported a lot by teacher. The research has
focused on studying the dieters that is ranging in age from 18 to 40. In study process,
information content was found and exploited from reliable sources. In Google Scholar,
researcher uses document of several books and most of them are about the benefits of low
carbohydrate diet. Besides, researcher is also use ProQuest Central database which
supports of finding authentic information and abundant knowledge for study. Some
previous studies were investigated and consulted so as to learn the causes and solutions to
dieters and it pointed out that eat food contain starch or carbohydrate in long time had led
to many diseases such as obesity, high rate in blood sugar, heart disease etc... Also, this
research has investigated the benefits that low carbohydrate diet is bringing to people,
especially for the Vietnamese.

Possible solutions were recommended for Vietnamese dieters are doing DAS diet - low
carbohydrate diet that was converted to appropriate with Vietnam dining culture, doing
exercise following HIIT method, eating five days with DAS and eating freely in two days
left is the approach to keep the body healthy and away of disease.

Due to insufficient insight, lack of time as well experiences in process of doing research,
so this paper still suffer from shortcomings. However, it is expected that this study will
be used as reference for further researchers. Besides that, the findings of this research
will be useful for those who are actually facing problems in health and weight, assist
them to improve their confidence in health and weight.
