tomatoes, deseeded and finely diced

1 cucumber, deseeded and finely diced


1 red onion, finely diced
1 green capsicum, deseeded and finely diced
handful of chopped parsley
1 tsp cumin seeds, roasted and ground
2 lemons, juiced
5 dessertspoons olive oil
sea salt and freshly ground black pepper

ou will notice that we dont really give quantities much in this recipe. With salads we always
think that you should go with what you fancy.

Spinach

Pomegranate seeds

Tomatoes (we use cherry because it reduces


chopping effort!)

Red onion

Fresh mint leaves

Balsamic

Extra Virgin Olive Oil

Steps
1. Chop up the tomatoes and red onion into bitesize pieces
2. Mix the tomatoes, red onion and spinach
3. Sprinkle over the pomegranate seeds
4. Crumble the feta cheese over the salad
5. Rip up some mint leaves and scatter across the salad

6. When ready to eat, mix two parts olive oil to one part balsamic and pour over the
salad.
