Purpose Objective

To list the 2 main departments in a restaurant & to identify the work areas and job
positions within each area.

Input
Read the discriptions and talk about FOH and BOH as a group.

In a moment we are going to breakModling


into groups. Each group will get one packet.
Your job is to determine if each area of the restaurant is FOH or BOH and if each
employee works in the BOH or FOH. Lay the cards out as such.

Practice
Split up into groups of 4. AndGuided
beginging
working on sorting. You will have 15
minutes for this activity. At the end of the activity we will review together each
position and see how many your group got right.

Check for Understanding

Review student findings by starting with the areas of the restaurant. Next go over
the job positions and what each position does and why they are important to the
restaurant.

Independent Practice

Now that we have reviewed all of the restaurant areas and postions take time to
complete the FOH and BOH portfoilo pages for your semester binder.

Today we learned about postions in aClosure


restaurant. What is one job you want to have
and one job that you do not want to have? Explain why? Do whip around if time
allows otherwise have students raise their hands when they agree with a classmate
and get their input.
