METHOD:
1)
Toss all ingredients together and put through a grinder fitted with a medium-hole plate or
place in a food processor and pulse until medium chopped. Do not over-process. Divide
into 8 patties and refrigerate overnight.

Grill until cooked through but not dry, about 5 minutes or less on each side. Serve with
Braise Leek and Herb Custard and slices of sourdough bread brushed lightly with olive oil
and grilled along with the sausage.
