Toms Meat Loaf

INGREDIENTS
700g mince meat
2 celery sticks, finely chopped
3 spring onions, finely chopped
2 carrots, finely chopped
Handful parsley chopped
3 rashes bacon
1 egg
3 or 4 slices tasty cheese
French mustard
Pepper & salt.
Note, easier to use clean hands to mix ingredients, use large bowel.
Mix together all ingredients except cheese, bacon & mustard.
Use metal baking tin measuring L230 x W130 x H70.
Lay bacon evenly across tin so it will wrap around meatloaf.
Place half of mixture in metal tin over bacon.
Place cheese over mixture and spread a generous amount of mustard to cover cheese.
Place remaining mixture in on top and wrap bacon alternatively over mixture.
Preheat oven to 220c
.
20 minutes @ 220.
30 minutes @ 180.
Carefully remove meatloaf from baking tin, using remaining juices to make gravy.
Add a gravy mix or corn flour and water, mix over heat until gravy boils and thickens
