Carrot Cake
baking soda 3/4 tsp salt, 2 tsp ground cinnamon, 3/4 tsp ground nutmeg, 1/2 tsp ground ginger, 1
cup oil, 4 eggs at room temp., 2 cups packed light brown sugar, 1 1/2 tsp vanilla extract
instructions - Preheat the oven to 350 degrees Fahrenheit or 177 degrees Celsius.
Peel and shred the carrots. set aside. In a bowl, whisk the flour, baking soda, salt,
cinnamon, and nutmeg and ginger together.. in a separate bowl, whisk the eggs
orange.
Addition to ingredients - 1 tsp orange and lemon zest combined, 2 - 3 tbsp (or more
based on preference) coconut flakes and 1/8 cup of orange and lemon juice
combined.
