Context: (from the poem I too sing America)
Literally the men and women in the poem are singing during the day while they
are working to not only keep themselves occupied while doing physical work.
Metaphorically the men and women sing as a sign that these workers love their
jobs, despite how grueling it is.
Also, there is a difference between day time singing (to show their love for their
jobs) and night time singing (when you they are hanging out with their friends,
drinking spirits, and singing songs that are more fun.)
