Beef and Bean Burritos

Yield:6 to 8
Ingredients
1 table spoon, diced
2 pounds ground beef
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon ground oregano
1/4 teaspoon salt
Three 7-ounce cans tomato sauce
One 28-ounce can refried beans
3/4 cup grated Cheddar, plus extra for sprinkling
8 flour tortillas
1/2 cup fresh cilantro leaves
Directions:
Preheat the oven to 170 to 180 degrees F.
In a large skillet over medium heat, cook the onions until softened. Then add the ground beef
and cook until the beef is cooked through. Add the cumin, chili powder, oregano and salt and
stir to combine. Pour 2 cans of the Mexican tomato sauce into the meat and simmer over low
heat for 5 minutes. Add a little water if the mixture gets too dry.
Meanwhile, heat the refried beans in a saucepan over medium-low heat. Add the cheese, and
stir it in till its melted. Remove from the heat.
Heat the tortillas in the microwave for 1 minute, and then spread a small amount of beans on
each tortilla. Add a small amount of the meat. Fold over the ends of the tortilla, and then roll
them up. Repeat with the rest of the tortillas. Then place them in a large baking dish, cover with
foil and keep warm in the oven.

Crunchy Beef Taco

Yield : 10
Ingredients :
1lb ground beef
2 tablespoon Onion
1 container of fresh salsa (mild/med/hot your choice)
1 teaspoon cumin powder
1 cup chopped tomatoes
1 cup of shredded cheddar cheese.
1 cup of shredded lettuce
10 pcs corn tortillas
1 cup of vegetable oil
1 can refried beans
Instructions :
Chop of the onions as small as you like. Add onions and ground beef to largish fry pan.
Put them on medium heat and mix them up.
Once the beef is browned. Add 1 teaspoon of cumin. Add all of the fresh salsa. Mix and
cook for about 15-20 minutes. Do not cover. You dont want it too wet at the end, but it
will be juicy.
Grate your cheese. Sharpen your knife. Cut up the tomatoes. Wash and dry your lettuce.
Pour your vegetable oil in an 8 fry pan. Put it on med/low heat. You can test if its
ready by putting a small dash of water from your finger and if it starts popping, youre
ready. Each tortilla will only take a couple of minutes to cook. Place a tortilla in the oil,
after a minute or so, flip it, then take it out. Youll have to experiment to see how crispy
you like your shells, the longer you cook them, the crispier they will get. If you make
them way ahead of time, dont make them too crispy, then you can warm them in the
oven just before youre ready to eat without them getting too hard. Place your shells on
a paper grocery bag or a bunch of paper towels to soak up the excess oil.
Now put your tacos together with quantities that fit your appetite. Put in the beef. Then
the cheese. Then the tomatoes. Then the lettuce.
