Cajun Fish Fillets

INGREDIENTS
1 tablespoon paprika
3/4 teaspoon garlic powder
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 pinch cayenne pepper
2 teaspoons olive oil
2 halibut fillets
lemon wedge

DIRECTIONS
1.In a small bowl, combine paprika, garlic powder, thyme, salt, black pepper, cayenne pepper and
oil to make a paste.
2.Pat fish dry with paper towels.
3.Using the back of a spoon, rub paste mixture evenly over the entire surface of the fish.
4.Cover with plastic wrap and refrigerate for 2 hours.
5.Preheat bbq to medium high and grease grill.
6.BBQ halibut, turning once, until cooked through, about 3 to 5 minutes per side (Alternately, cook
fish in a nonstick frypan over medium high heat).
7.Cooking time may vary depending on thickness of fish.
8.Remove fish to a serving plate and serve with lemon wedges.
9.This rub works equally well with salmon, sea bass or tuna.
