50g/2ozbutter
50g/2ozplainflour

14sheetsfreshlasagnepasta
3125g/4ozballsmozzarella,cutintosmallcubes
smallhandfulgratedparmesan
freshlygroundblackpepper
2tbspbutter

Method
1. Preheattheovento180C/350F/Gas4.

2. Fortheragu,heattheoliveoilinafryingpanoveralowheatandfry
thecelery,carrotsandonionforapproximately15minutes,until
softenedandgolden.Addthegarlicandrosemaryandfryfortwomore
minutes.
3. Addthebeefandporkminceandcookuntiltheliquidfromthemeat
hasbeenabsorbed.
4. Pourinapproximately400ml/14flozofredwineandstirwell.Cookfor
approximately45minutes.
5. Oncethewinehasevaporated,addthetomatoesandstock.Leavethe
mixtureuncoveredtocookslowlyfortwohours.Topupwithmore
warmstockifnecessary.Seasonwithsaltandfreshlygroundblack
peppertotaste.

6. Tomakethebechamelsauce,placethemilkinalargenonstick
saucepan,addthebayleaves,onionandnutmegandgentlybringto
theboil.
7. Inaseparatesaucepanmeltthebutterandaddtheflour.Beatwelland
cookfortwominutes.Removethemilkfromtheheatandaddalittleto
theflourmixture.Combinewell,andwhenallthemilkhasbeen
absorbed,addalittlemore.Continuetodothisuntilallthemilkhas
beenadded,whiskingcontinually.
8. Forthelasagne,blanchthepastainsaltedboilingwaterforthree
minutes.Spoonathirdofthebechamelsauceintothebottomofa
lasagnedishinalayer,thenplacesomeofthepastastripsoverthe
top.Followthiswithsomeofthemozzarellaandparmesan,and
sprinkleoverfreshlygroundblackpepper.Followwithalayerofragu.
Repeatthissteptwiceuntilalltheingredientshavebeenusedup.Dot
knobsofbutteroverthesurfaceandcookintheovenfor30minutes,
oruntilgoldenbrownontopandcompletelycookedthrough.
