BROCCOLI

Use 750 g (14 Ib.) of broccoli or 1 broccoli foot
Wash the broccoli, cut the stems off and only use the broccoli flowers
Steam broccoli for 10 to 15 minutes or microwave* for 7 to 10 minutes
Let broccoli cool for 3 minutes
Place half of the cooked broccoli flowers into the blender and add 60 ml (1/4 cup) of
cooking water. Blend into puree. Repeat for rest of broccoli
> Place puree in ice cube containers and freeze.

Keeps: 6-8 months in the freezer

Use 1 kg (2 Ib.) of carrots
Peel carrots, cut the tips and discard. Cut carrots into 2,5 em (1") cubes
Steam carrots 10 to 15 minutes or microwave* for 12 to 15 minutes
Let carrots cool for 3 minutes
Place 375 ml (13 cup) into blender with 80 ml (1/3 cup) of fresh water. Blend into
puree. Repeat with the rest of carrots
> Place puree in ice cube containers and freeze.

NOTE: For carrots, do not use cooking water to puree due to its Nitrate content.
* Microwave: Always cover vegetable and turn half-way through cooking time.

HOMEMADE PUREES
Apples
8 to 10 apples
Makes: 500 mi to 750 ml (2 to 3 cups)
Keeps: 6-8 months in freezer
> Wash and brush skin of the apple
> Remove the core, Cut in four and slice.
> Cook in 125 ml (1/2 cup) water
> Bring to boil. Reduce heat and simmer for about 20 minutes or until apples are
tender,
Microwave with 125 ml (1/2 cup) water, covered for 12 to 15 minutes or until apples
are tender.
Let cool for 5 minutes.
Place 500 ml (2 cups) of apple in blender. Blend until skin is no longer seen.
Place in ice cube containers and freeze.

Peaches
1 litre (4 cups) of peaches
Makes: 325 ml to 500 ml (1% to 2 cups)
Keeps: 6-8 months in freezer
> Peel and remove nut, Slice peaches.
> Cook in 125 ml (1/2 cup) water. Bring to boil. Reduce heat and simmer 15-20
minutes or until peaches are tender.
Microwave with 125 ml (1/2 cup water), covered for 7-8 minutes
Cool for 5 minutes.
Place half the peaches with 1 tablespoon cooking water. Repeat with other peaches.
Place in ice cube containers and freeze.
Prunes a

> Same procedure as with apples and peaches, however, you must first soak the
prunes.
> Soak prunes in 2 cups of hot water for 5-15 minutes. Drain prunes.
> Cook in 1 cup of cold water. Bring to a boil and simmer 20 minutes.

HOMEMADE PUREES:
Beef or veal
500 g (1 Ib.) of lean beef or veal cubes 2,5 cm (1")
Water
1 celery stalk
3 carrots, peeled
2 potatoes, peeled and cut in pieces
+ of an onion
Makes: 300 mi (1-1/4 cup)
Keeps: 1-2 months in freezer
> Cook beef in 622 ml (23 cups) of water. Bring to a boil and let simmer 45 minutes
Add vegetables and let simmer another 35 minutes.
Separate meat and vegetables.
Place 200 ml (3/4 cups) of cooked meat and 80 ml (1/3 cup) of cooking water in
blender. Puree and place in ice cube containers and freeze.

Chicken
2 boneless chicken breasts
80 ml (2 cup) water or vegetable broth (no salt added)
Makes: 250 ml to 300 ml (1 to 1-1/4 cup)
Keeps: 1-2 months in freezer
> Steam chicken breast about 10-12 minutes or until chicken is white. Do not let meat
harden.
> Place 125 ml (1/2 cup) of chicken and 80 ml (1/3 cup) of water or broth

HOMEMADE PUREES
Fish
250 g ($ Ib.) of fish filets*
125 ml (4 cup) breast milk or formula, or 3.25% milk
Makes: 250 mi (1 cup)
Keeps: 4-6 weeks in freezer
Remove all fish bones
Use 60 ml (1/4 cup) of warm milk
Slowly add fish filets. Poach the filets by covering and cooking at low heat 5-10
minutes or until fish flesh can easily be undone with a fork.
Let cool, Place 2 the fish in blender. Puree and place in ice cube containers and
freeze,

HOMEMADE PUREES
Legumes
250 ml of lentils
or
250 ml (1 cup) of soaked kidney or white beans
Makes: 250 ml (1 cup)
Keeps: 2-3 months in freezer
> Cook legumes in enough water to cover them. Cook until legumes can be easily
mashed with a fork.
» Let cool a few minutes and drain.
Place half the legumes in a blender with 500 ml (2 cups) fresh water.
Puree and place in ice cube containers and freeze.

Tofu
30 to 60 ml (1 to 2 oz) soft tofu
Makes: 1 serving
> Mash tofu with a fork and serve
