Chili Cheese Strata

10 slices white bread, 2 cups cheddar or monterey jack cheese, 1 40z. can green
chilies, 4 0z. green chili salsa, 4 eggs, 1 can condensed cheddar cheese soup u
n diluted, 2 cups milk or half and half, 2 tbls. chopped onion, 1 t. worcestersh
ire sauce.
Place bread in 2 qt. baking dish [ greased]. Sprinkle 1 c. cheese over. Pour sal
sa over cheese; set aside. In blender combined, eggs, soup,milk, onion, and Wor
cestershire sauce; pour over bread mixture. Sprinkle the rest of cheese over. C
over and ref. overnight.
Remove from ref. 30 min. before baking. Bake uncovered, at 350 for 30 minutes o
r until a knife comes out clean. Let stand 10 min. Serves 8-10

Ham and Cheese Strata


2 t. soft butter, 12 slices bread crusts removed, 12 thin slices ham,4 0zs. shar
p cheddar cheese, shredded, 8 0z. shredded swiss cheese, 3 eggs beaten, 1 1/2 c.
milk, 1/2c. chicken broth, 1/2 c. white wine, salt & pepper and paprika to ta
ste.
Spread butter lightly on one side of bread. Place buttered side up in greased 9
x12 baking pan. Place ham on bread slices;sprinkle with mixture of cheeses. Be
at eggs, milk, chicken broth, wine, salt and pepper. Pour 1/2 mixture over layer
s. Sprinkle with rest of cheese. Pour remaining egg mixture over top. Sprinkle
with paprika. Chill, covered, 12 hrs. or overnight. Bake , uncovered 350 degs.
1 hr. or until puffed.
Cheese Strata
1 lb. sausage, 12 slices bread,8 oz. shap cheddar, 6 eggs,2 1/2 c. milk, 3/4 t.
salt,1/8 t. pepper,1/4 t. dry mustard, 1t. worcestershire sauce, 1 can cr. mushr
oom soup, 1 4oz. mushroom pieces. Br. sausage and crumble, drain. Put 1/2 bread
in 9x13dish and top with meat and cheese Mix next 6 ingred.and pour over. Chill
several hrs. Bake 350 1 hr. Use mushroom soup and pieces for sauce over or ca
n omit these ingred. Serves 8
