Serve Sambar piping hot with Ids, Vadas or just
plain and simple boiled rice.
Ingredients:
2 cups Toor or Tuvar (spit yellow pigeon peas)
“4 tosps Sambar Masala
1 cup chopped eggplant (cut nto 2"cudes)
1 cup chopped potato (cut into 1"cubes)
10 pearl onions, peeles and cored
10-12 baby okra
1/2 cup pumpkin
10-12, 3"Iong pieces of drumstick (optional)
Golf ballsized lump of tamarind
‘+ 3 tbsps ghee (clarified butter)
+ tsp mustard seeds
+ 8-10 curry leaves
#3 dry red chilies
+ Salt to taste
* Chopped fresh coriander leaves
Preparation:
Bol the lentils and Sambar Hiasala with enough water tllthey are soft. The consistency
shoule be that of a thick soup.
‘+ Soak the tamarind in a small dow! of hot water for 10 minutes. Squeeze wellto remove all

‘+ Add this purée to the lentils, Mx well, Add salt to taste,
‘+ Simmer and add the potatoes to the lentils, Cook til the potatoes are half cooked. Now
{add the other vegetables and cook til cone,
+ Heat the ghee in a small pan and add the dry red chiles, mustard seeds and curry leaves,
Fry til the spluttering stops and ad¢ to the boiled lentils. Mix well
+ Garnish with chopped green coriander and serve hat with Iols, Vaeas or alain boiled rice.
