Letter of Intent 2
For my senior project, I have chosen to create original gluten free baking recipes. Not being able to eat
gluten has effected my love for baking. Gluten free recipes never taste as good as their gluten filled
counters. I want to try and create some recipes that taste good and wont get me sick. My mentor will be
Kristin Lewin. She owns a gluten free baking business in Walnut Creek called the Sugar Dot Bake Shop.
In my paper, I hope to learn why celiacs disease has become more common in the U.S. today. I also want
explore how wheat is being processed to see if this process is making us sick. For this Paper, I will have
to do a lot of research on the internet and library research.
This project will be challenging because I have never tried to create my own recipes before. I will use my
knowledge from my biology and chemistry classes as well as being the TA for the special education
cooking class. The mentored project should involve about 20 hours of work and will cost around $40 to
buy ingredients.
