1. I n a l a rge fr ying pan melt butter and add garlic. Cook on mediu m -
l ow h e a t for 3-5 minutes . Season with freshly g round salt a n d
p e p p e r.
2. Ad d p u r e cream to butter and stir until well combined. Bring t o a
s l i g h t s i mmer. Optionally, peas can be added to the butter and cre a m
m i x t ur e a t t his po in t .
3. S t i r i n g rated Pecorino and g rated Parmesan cheese and cook ove r
m e d i um hea t un t il mel t ed.
4. Ad d c o oked Fettuccine to the sauce and toss pasta until i t i s
t hor oug h ly co a t ed.
