Baked Macaroni and Cheese

stick unsalted butter


lbs macaroni or small shells
cup flour
2 cups whole milk
1 tsp dry mustard
1 tsp Worcestershire sauce
1 cups sharp cheddar cheese, grated
1 cup Swiss cheese, grated
cups Parmesan cheese
Kosher salt and pepper, to taste

For the Topping


cup Panko bread crumbs
cup crushed potato chips
1-2 Tbs olive oil

Directions
1. Preheat oven to 350 F.
2. Cook pasta until al dente.
3. Prepare 8x8 baking dish with cooking spray.
4. In a large saucepan, melt the butter. Sprinkle in flour and cook until slightly
golden (about 2-3 minutes). Slowly pour in milk and whisk until combined.
Season with salt, pepper, Worcestershire sauce, and dry mustard. Let simmer
whisking until it starts to thicken (about 5 minutes).
5. Remove pan from heat and whisk in cheddar, Swiss, and half of Parmesan cheese.
Continue whisking until cheeses are melted and smooth. Stir in cooked pasta and
pour into prepared dish.
6. In small bowl, combine Panko, potato chips, and remaining Parmesan cheese.
Drizzle in olive oil and toss together. Sprinkle over mac and cheese. Cover with
foil and bake for 30 minutes. Remove foil and bake another 15 minutes until top
is golden and bubbly.
