Puteri Ayu (steamed Mini Pandan Sponge Cake)

Ingredients:

2 eggs

70g caster sugar

150g plain flour

1/2 tsp baking powder

120ml coconut milk (blend 6pcs pandan leaves with coconut milk and strained)

1/2tsp salt

Topping:

60g fresh shredded coconut

1/4tsp salt

1 tsp corn flour

METHOD:

Mix the topping ingredients together and keep aside.

Brush the mould with some cooking oil, fill bottom of the mould with shredded
coconut.

Stack 2 moulds together and press till shredded coconut is firmed.

Sift flour and baking powder.

Beat sugar and eggs until fluffy. I used electrical mixer.

Add coconut milk and mix well.

Slowly add in flour and mix till well combine.

Fill the sponge cake mould with batter till full.

Prepare steamer, when water boil put in the mini sponge cake, steam for 10
-15mins.
When cake turned slightly cool, remove the cake from the mould.
