Mango Jam

2 pounds mangoes
3/4 cup sugar
cup water
2 tbsp lime or lemon juice (optional)
1 tsp vanilla (optional) or 2 tsp rum extract

Peel mangoes; add to large pot. Cook until soft; remove seeds & strings; mash.
Place sugar & water in separate pot over low heat; stir & bring to boil. Increase heat to medium-high. Boil to 220
degrees, until fine soft threads form.
Add mangoes and optional ingredients. Boil until thickened, about 5 minutes.
Pour into sterilized jars and seal according to canning directions.
