ABSTRAC
The heat treatment in the industry involves the use of high temperatures for
short periods of time, as well as the application of low temperatures, to assure
the safety of the food; however, the indicated process conditions represent
excessive energy costs and can negatively affect the nutritional and sensorial
quality of processed products. Treatments such as pasteurized, scalded, as well
as refrigerated and frozen, can cause a negative effect on food such as
generating nutrient loss, it is also said that no heat treatment can preserve the
nutrients and characteristics of food at 100%.

II. OBJETOVOS
Por ello, los alimentos habr que mantenerlos bien por debajo o
bien por encima de las temperaturas de desarrollo bacteriano. Por
encima de los 100 C los microorganismos empiezan a morir,
mientras que si se sitan por debajo de 0C no mueren pero el
crecimiento queda inhibido. Las temperaturas de refrigeracin,
entre 4C y 8C, son relativamente seguras.
