Nc ta c ngun sn di do nht, chng c trng khp c ba min t
nc. Vi c tnh d trng, sn lng cao, u t t nn tinh bt sn tng i r
so vi cc loi tinh bt khc. V vy tinh bt sn thch hp lm nguyn liu sn
xut ra cc sn phm phc v cho cng nghip thc phm.
Trong cng ngh sn xut v ch bin thc phm, bt ngt (m chnh) l cht
ph gia thc phm c s dng kh rng ri. M chnh l mui mononatri ca axit
glutamic. Hin nay nc ta vn cn t cc nh my sn xut axit glutamic, m
phn ln l nhp t nc ngoi, y l li th xy dng nh my sn xut axit
glutamic cung cp cho th trng trong nc.
Axit glutamic thuc loi axit amin thay th nhng c vai tr quan trng trong
qu trnh trao i cht c th ngi v ng vt.
Axit glutamic tham gia cu to nn cht xm v cht trng ca no, kch
thch cc phn ng oxi ho ca no.
Khi vo c th, axit glutamic chuyn ha di dng glutamat. Mi ngy, c
th cn khong 10 gam glutamat, ring no cn khong 2,3 gam glutamat.
Axit glutamic tham gia vo vic to thnh protein v hng lot cc axit amin
khc nh: alanin, propin, xystin.V vy, trong y hc, axit glutamic c xem l cht
b no, cha cc bnh thn kinh phn lp, bnh chm pht trin v tr no, v tim
mch, cc bnh v c bp tht.
Ngoi ra, axit glutamic l ngun nguyn liu ch yu sn xut bt ngt v
mt s cht iu v khc, mc ch ca n l to hng v, lm thc n thm ngon
hn.
Axit glutamic cn l ngun nguyn liu khi u cho vic tng hp mt s
ho cht quan trng.
Vic sn xut axit glutamic l mt vic cn thit, l ngnh cng nghip quan
trng cho cng nghip ch bin thc phm, dc phm ni ring v ngnh cng
nghip ni chung.

C nhiu phng php sn xut song c 4 phng php c bn: tng hp ho hc,
thu phn protit, ln men v kt hp. Song phng php ln men c nhiu u im
hn: khng s dng nguyn liu protit, khng cn s dng nhiu ho cht v thit b
chu n mn, hiu sut cao, gi thnh h, to ra axit glutamic dng L, c hot tnh
sinh hc cao.
V vy, p ng nhu cu trong nc v tin ti xut khu, nn em c
giao ti thit k nh my sn xut axit glutamic vi nng sut 4570 tn sn
phm/nm.

CHNG I
LP LUN KINH T - K THUT

1.2. Vng nguyn liu
Qung Nam c nh my tinh bt sn FOCOCEV, ng thi tnh Qung
Nam cn gip vi tnh Qung Ngi, Bnh nh s l ngun cung cp nguyn liu
cho nh my rt thun li.
1.3. Hp tc ha

S dng t h thng li in quc gia 500KV truyn ti v KCN bng ng
dy 110KV. Ti chn KCN c Trm bin p 40 MVA (110/22), mng 22 KV trong
KCN.

Lng hi t cung cp cho cc phn xng ly t l hi ring ca nh my.


Nhin liu dng cho l hi l du DO c cung cp t cc trm xng du trong
tnh.
1.5. Ngun cung cp nc v vn x l nc [34]
Trong KCN c Nh my nc cng sut 5.000 m3/ngy m cung cp cho cc

1.6.Giao thng vn ti:
Nm gn Nng, l u mi giao thng quan trng ca hai min Nam Bc.

Ngun nhn cng s c tuyn t ngun lao ng ca a phng v cc
vng ln cn, lng lao ng vn lai cng di do t c th thu nhn cng vi
gi r.
Th trng tiu th c chn l th trng ca c nc v hng n xut
khu sang cc nc trong khu vc, c bit l khu vc ng Nam .
1.8. Ngun tiu th sn phm
Ngun tiu th sn phm ch yu ca cng ty l hng vo cng ty Dc
Bnh nh Bidiphar, cc cng ty ch bin thc n gia sc, gia cm trong khu vc v
y l cc cng ty cn mt lng ln axit glutamic phc v cho sn xut hng
nm. Ngoi ra, cc ph phm trong qu trnh sn xut cng lm nguyn liu cho nh
my phn bn phc v cho trng trt.
Bn cnh xut khu sn phm sang cc nc Lo v Campuchia cng l th
trng cn c hng ti trong qu trnh hot ng ca nh my.
Kt lun: Vi nhng iu kin thun li trn l hon ton c th xy dng
v m bo cho s hot ng ca mt nh my sn xut axit glutamic ti tnh

CHNG II
TNG QUAN V TI LIU
2.1.Tinh bt sn [1],[5]
Tinh bt sn c sn xut trong qu trnh ch bin c sn. C hai loi sn:
sn ng v sn ngt khc nhau v hm lng tinh bt v xianua. Sn ng c nhiu
tinh bt hn nhng ng thi cng c nhiu axit xyanhydric, khong 200 300
mg/kg. Sn ngt c t axit xianhydric (HCN) v c dng lm lng thc, thc
phm. Sn trng cc tnh pha Bc ch yu l sn ngt v tinh bt thu c khng
c HCN.
Thnh phn ho hc ca tinh bt sn ph thuc ch yu vo trnh k thut
ch bin sn. Trong tinh bt sn thng c cc thnh phn sau:
Tinh bt : 83 88% [5]
Nc : 10,6 14,4%
Xenluloza : 0,1 0,3%
m : 0,1 0,4%
Cht khong : 0,1 0,6%

Tinh bt sn c kch thc x dch trong khong kh rng 5 40 m. Di

2.2.2.Vai tr ca axit glutamic [7]
Axit glutamic (cn gi l axit aminoglutaric) l hp cht ph bin nht
trong cc protein ca cc loi ht ng cc, nh trong prolamin ca cc ht u cha
43-46% axit ny. Axit glutamic ng vai r rt quan trng trong vic trao i cht

2.3. Phng php sn xut axit glutamic:

2.4.Chng vi sinh [20]

Tham gia vo qu trnh ln men sn xut axit glutamic, chng vi sinh thng
s dng l: Corynebacterium Glutamicum, Brevibacterium Lactofermentus,
Micrococus Glutamicus; nhng ch yu nht vn l chng Corynebacterium

2.5.Nhng yu t nh hng n qu trnh ln men [7]


2.5.1. pH ca mi trng
Cc chng vi khun sinh tng hp L-Glutamic u thch hp mi trng
trung tnh hay kim yu pH=6,7 8. Trong qu trnh ln men pH gim v to
ra axit glutamic v mt s axit hu c khc. Do phi iu chnh pH thng

2.5.2.S cung cp O2

2.5.3 Nhit
Nhit thch hp nht cho qu trnh ln men l 26-37oC, trong thc t ln
men giai on u 30-32oC v giai on cui 36-37oC.
2.5.4. Cht kch thch sinh trng
Qa trnh tng hp axit glutamic rt cn biotin. Biotin khng ch l cht sinh
trng m cn l cht xc nh thnh phn v s lng cc sn phm ln men. Sinh
khi ca vi khun tng t l vi hm lng biotin nhng vi axit glutamic th khng
hon ton nh vy: lng axit glutamic c to thnh nhiu nht khi trong mi
trng hm lng biotin thp hn nhiu so vi hm lng biotin cn thit cho s
pht trin ti a ca sinh khi. Biotin khng lm thay i hot lc ca cc enzim
tng hp nn axit glutamic m nh hng n tnh thm thu ca mng t bo, lm
cho axit glutamic t bn trong t bo vi sinh vt khuych tn ra ngoi mi trng
ln men. Nng biotin thch hp nht cho sinh tng hp axit glutamic 2-5g\l.
Ngun cung cp biotin l cao ng, r ng ma. Trong qu trnh ln men
nu dng r ng ma lm ngun cung cp ng v biotin th thng xy ra hin
tng tha biotin s khng c li, sinh tng hp axit glutamic t, nu sc kh km s

to ra alanin v axit lactic. V vy, ngi ta phi b sung thm penicilin km hm


s pht trin ca vi khun trong mi trng giu biotin ng thi tng trng qu

CNG NGH
3.1.Chn phng php sn xut [5]
Phng php ln men l phng php s dng rng ri hin nay sn xut
axit glutamic.
Nguyn tc: Dng chng vi sinh vt c kh nng tng hp ra axit glutamic
sn xut.
Sn xut axit glutamic bng phng php ln men ngi ta s dng 2 phng
php l ln men 2 giai on (gin on) v ln men 1 giai on (trc tip).
3.1.1. Phng php ln men gin on
Nguyn tc ca phng php ny l u tin to ra _Ketoglutaric bng cc k
thut vi sinh nh nui cy vi sinh vt. Sau , chuyn ho _Ketoglutaric thnh axit
glutamic nh enzyme aminotransferase v glutamatdehydrogenase.
Giai on chuyn t _Ketoglutaric thnh axit glutamic c th s dng nhiu
chng khc nhau nh Pseudomonas, Xantonomas, Ervinia, Bacillus, Micrococus.
Nhc im ca phng php ny l dng qu nhiu enzyme v axit amin lm

3.1.2. Phng php ln men trc tip
Nguyn tc ca phng php ny l sn xut axit glutamic ngay trong dch

3.3 Thuyt minh quy trnh sn xut
3.3.1 Nguyn liu
Tinh bt sn l sn phm c ch bin t c sn. Trong tinh bt sn cha
83-88% hm lng tinh bt. Hn na, Vit Nam hin l nc ng th 3 v xut
khu tinh bt sn. V vy, tinh bt sn thch hp lm nguyn liu sn xut axit
glutamic

KIM TRA SN XUT V NH GI CHT


LNG SN PHM
Kim tra sn xut l vic ht sc quan trng c bit i vi ngnh cng ngh
thc phm. Kim tra sn xut nhm m bo cht lng sn phm ca nh my,
m bo cho cng nhn thao tc ng qui trnh k thut, trnh nh hng xu n
sn phm cng nh nhng s c k thut v h hng ca my mc, thit b. Kim
tra sn xut gip ta nh gi c tnh hnh hot ng ca nh my v ra k
hoch hp l. ng thi, qua pht hin c nhng sai st iu chnh hoc c
bin php ci tin k thut nh my hot ng tt.
