Basic Eggless Cheesecake

INGREDIENTS

12 graham crackers

1 cup of cream cheese

cup of thick cream

1 tsp of lime juice

cup of sugar

tsp of vanilla extract

tsp of salt

2-3 tbsp of melted butter + more for greasing (if required)

INSTRUCTIONS

Blend the crackers and the melted butter into a coarse powder. Press this firmly into the base of the
cheesecake tin. Refrigerate until needed.

Using an electric beater, beat the cream until soft peaks form.

In a separate bowl, beat the cream cheese, lime juice, sugar, salt, and vanilla together until soft and
fluffy (about 3 mins). Add the cream to this mixture and beat again to combine. Gently layer on top of
the biscuit base that you refrigerated.

Refrigerate for at least 5-6 hours until firm. Serve chilled.
