Double Choc Banana Cake

Ingredients:
1 ½ cup Wholemeal Spelt flour (Buckwheat flour or any
other similar healthy alternative can be used)
¼ teaspoon Pink Himalayan salt
1 teaspoon baking powder
½ teaspoon baking soda
2 teaspoons cinnamon
4 tablespoons Cacao Powder
1 large ripe banana
½ cup Almond Milk
2 egg whites
2 tablespoons melted coconut oil
4 tablespoons Brown Rice Syrup (or Agave Nectar)
½ cup Greek Yogurt
1 teaspoon vanilla extract

Instructions:
-Preheat oven to 180C
-Mix dry ingredients in large bowl
-In a blender mix banana and milk
-In a separate bowl whisk egg whites. Add melted Coconut Oil, Brown Rice Malt Syrup, Greek Yogurt
and Vannilla extract. Add banna / milk mixture and mix well.
-Add Dry and Wet ingredients and mix well
-Grease baking pan and pour in mixture
-Bake for around 20-25 minutes

Chocolate glaze to pour over cake once it is cooked and cooled:


Add following ingredients to saucepan and mix until they melt together (won’t take long at all so
keep an eye on it)
-2 tablespoons coconut oil
-2 tablespoons Cacao Powder
-1 Tablespoon Brown Rice Syrup
-1 Tablespoon ‘Loving Earth’ Hazelnut Chocolate butter (aka the best healthy thing you will ever
taste; it’s so good you could eat it from the jar… and sometimes I do)
*If you don’t have this choc butter just add extra Rice Malt Syrup
-Allow to cool slightly, pour over cake – DEMOLISH!
