LEMON MOUSSE

Ingredients:

 70 gram of sugar.
 75 cm2 of juice of lemon.
 5 gram of unflavored gelatin.
 5 gram of lemon zest.
 125 gr of milk cream
 A little of vainilla extract.
Step
1. Add sugar and lemon zest in a saucepan, and pour water. Heap up to 117 degrees.
2. In this moment, beat the eggs white until stiff, add the last syrup in form of trickle
and beat until the bowl is cold.
3. Apart beat the vainilla cream to your liking, hydrate the gelatin and combine with
lemon juice and then put in microwave or in doublé boiler.
4. Add all in the cream in two series in covering form, then put in ice cream dish and
put in the freezer.
5. Decorate.
