Garlic Naan

Makes 6 medium naan

300g plain flour

4 tbs. milk

4 tbs. plain yoghurt

85-90ml water

¾ tsp. baking powder

½ tsp. bicarbonate of soda

½ tsp. salt

1½ tsp. sugar

15g butter, melted plus extra for brushing over finished naan

1) Preheat oven to its highest setting, mine goes up to 275C. Place a baking sheet on the uppermost
shelf to heat through.

2) Mix together all the dry ingredients. Make a well in the middle and add your wet ingredients.
Bring together with your hands into a dough. Knead quickly until smooth.

3) Roll out into ¾ cm thick breads using a little flour. Pat off any excess flour and place on your
baking sheet, you will need to do this in two batches. Cook for 2-4 minutes or until there are brown
spots on the upper surface. Brush with the extra melted butter, which helps to soften and brighten
the surface and serve hot.

Garlic and coriander butter naan – crush one large garlic clove and add to a small saucepan along
with 2 tbs. butter and melt the butter. Stir in 2 tbs of chopped fresh coriander and brush over the
cooked naan.
