Pretzels

Ingredients:

Bread flour: 12oz

Pastry flour: 4oz

Water: 10.5oz

Instant yeast: .13oz or 4grams

Salt: .1 oz. or 3 grams

Sugar: .3 oz. or 10grams

Soda Wash:

Water, warm: 16oz.

Baking soda: 2 oz.

Pretzel salt or coarse salt to taste.

Procedure:

Bake baking soda @250 for 2 hours

Mix:

Add all ingredients, in mixture and mix for 5 minutes or until dough is soft and balled

Allow to bench rest, covered for 30-60 minutes.

Scale dough into 5 oz. balls

With palm of the hands, roll on the bench to a uniform strip 30 inches long

Twist into pretzel shape

Dip in a solution of baking soda and water

Arrange on baking sheets and reform if necessary

Sprinkle with pretzel salt

Bake immediately at 500 degrees for 8-9 minutes until well browned.
