CARAMEL BUTTER TARTS

Ingredients:
Pastry:
1 Cup All-Purpose Flour
½ Cup Butter or Margarine, softened
¼ Cup Confectioners’ Sugar

Filling:
3 Tablespoons Butter or Margarine, softened
¾ Cup Brown Sugar
1 pc. Whole Egg, beaten
½ teaspoon Iodized Salt
½ Cup Chopped Raisins
1/3 Cup Chopped Walnuts (or use Plain Peanuts)

Procedure:
1. Pre-heat oven to 350°F.
2. Generously grease and flour 24 small muffin cups, 1 ¾-inch in diameter.
Set aside.
3. Mix flour, butter, and confectioners’ sugar using hands or a fork.
4. Divide dough into 24 small balls.
5. Press each ball against bottom and sides of prepared muffin cups. Do not
allow the pastry to extend above tops of cup. Set aside.
6. Mix butter and brown sugar. Stir in egg, salt, raisins, and nuts.
7. Spoon a scant Tablespoon of mixture into each cup.
8. Bake until light brown for about 20 minutes. Cool. Remove tarts from cups
by inverting pans.
