Beef bourginon

Shopping List

Chicken Stock - 500ml (fresh if possible)


Powdered gelatin - 4 packs/30g (half this amount if using homemade stock)

Neutral oil to cook in - 30ml ish


Beef chuck joint boneless - 1.25kg
All purpose flour- 20g

3 Large Carrots
2 medium yellow onions
4 cloves garlic
Cremini mushrooms (button mushrooms to substitute) - 400g
Pearl onions/round small shallots -225g
thick cut fatty bacon/big lardons - 100g

Brandy to deglaze (optional)

1 bottle dry red wine


Fish sauce - 15ml
Soy Sauce - 15ml
Bouquet garnis - 3 sprigs of thyme, 3 sprigs parsley and a bay leaf tied together

Serve with Tagliatelle and garnish with flat leaf parseley
