Aloo Chat
Ingredients :
Potato, boiled, peeled and cubed Green chilies, finely chopped –
– ½ kg 1-2
Asafoetida – 1 tsp Salt – to taste
Onions, finely chopped – 2 Chat Masala Powder – 1 tsp
Tomato, finely chopped – 1 Coriander Leaves – 2 tsp
Ginger, juliennes – 2 tsp Lemon juice – 1 tbsp

Method :
Mix well. You can also add few drops of lemon juice.
Let it cool.

After the stuffing has cooked, divide the dough into 6 equal parts.
Roll the dough into small chapatis. Stuff the stuffing and seal it from all
sides properly.
Roll again with light pressure taking flour into ½ inch thick rounds.
Now shallow fry them with oil on medium flame, one by one evenly on
both sides.
You can pack this parathas and have it with curd or any pickle/ ketchup/
relish.

Ingredients :
Raw Banana - 2 Coriander leaves - 2 tsp
Sago, soaked for an hour - ½ Salt to taste
cup, Oil - 2 tbsp
Groundnuts, crushed - ¼ cup
Green chili - 1
Method :
Boil the raw bananas with their skin for 5-7 minutes.
Mix together banana, sago and all other ingredients except oil.
Make small sized balls from the mixture and flatten it to make cakes.
Now shallow fry the cakes on medium flame, both the sides till golden
brown in colour.

Ingredients :
Pizza base, medium - 2 Spring Onions, springs and bulbs
Cheese spread - 2 tbsp chopped separately - 2

Ingredients :
For the stuffing: Chenna - 1 cup
Peas, crushed - ½ cup Salt - to taste
Ginger, chili paste - 2 tsp Coriander leaves, chopped - 2
Salt - to taste tsp
Method :
Heat 1 tsp oil in a pan. Add cumin seeds and let them crackle.
Add crushed peas and sauté them for 5 minutes or till all the moisture is
dried up.
Add all other remaining ingredients, mix well and cook for a minute.
Meanwhile mix all the ingredients for the chenna and mix well.
Divide into 6 equal parts. Roll and flatten into 2" rounds.
Divide the pea’s mixture into 6 equal parts and stuff each rounds into

chenna cake.
Shallow fry them and put them on the tissue paper to soak the extra oil.

Chocolate Rolls
Ingredients :
Marie biscuits/ Digestive biscuits Milk - ¾ cup
/ unsalted - 200 gms Malai / Fresh cream - 2 tbsp
Grated Dark Chocolate - 1 tbsp Desiccated coconut - 1 tbsp
Powdered sugar -1 tbsp Icing sugar - 1 ½ tbsp
Cocoa powder - 1 tbsp Green cardamom seeds powder
Drinking chocolate - 1 tbsp - 2 tsp
Method :
Grease your palms a bit and apply the greasing on the dough just to give
it a shine.

Now roll them on a plastic sheet or a greased inverted steel plate into ½"
thick round.
Apply the cream mixture evenly over the rounds. Roll them with light
hands.

Boiled corn pods - 1 cup Onions, chopped - 2

Add the other vegetables and cook for 2 minutes on medium flame.

Ingredients :
Daliya (cracked wheat) - 1 cup Ginger, grated - 1 tbsp
Mixed vegetables, finely Coriander leaves - 1 tbsp

Turmeric powder - a pinch Cumin seeds - ½ tsp
Cashew nut - few Asafoetida - a pinch
Raisins - few Coriander powder - 1 tsp
Corn pods - ¼ cup Water - 2 cups

Garlic Bread
Ingredients :
Bread loaf, cut into slices - 6 Garlic, grated - 1 tsp
slice Garlic, finely chopped - 3 tsp
Garlic paste - 2 tsp Paprika powder - to
Butter - 4 tsp garnish(optional)
Salt - a pinch
Method :
Toast this side as you desire. Turn the bread and cook for a minute on low
flame.

Ingredients :
For the dough: Mixed sprouted pulses – ½ cup
Whole wheat flour – 1 cup Onion, chopped – 1 big
Oil – 1 tsp + for shallow frying Salt and pepper – to taste
Salt – to taste Green chili, finely chopped – 1
Water – enough to bind the tsp
dough Ginger, grated – 2 tsp
Oil – 1 tsp
Capsicum, chopped – 1 tsp
Method :
Bind a soft pliable dough with the flour, salt, oil and water.

Divide the dough into 8 equal parts. Roll them into very thin chapattis.
Dry roast them lightly on one side and then roast it properly on one side.
Now divide the filling into 8 equal parts and stuff into each chapatti in the
middle.
Overlap the two ends and seal both the tips using the paste very nicely.
Cut into slants and pack them in a silver foil and give tomato ketchup
along with it.

Heart Cookies
Ingredients :
Flour - 2 cup White Butter - ½ cup
Desiccated coconut - 1 cup Baking powder - ¼ tsp
Castor sugar - ½ cup Mixed Fruit jam - 5 tbsp
Method :
Roll the dough into ½ inch thick rounds and cut in heart shapes with the
heart shape cutter.
Take half of the cookies and make a hole in the middle with the help of
small bottle cap.
Prick all the cookies with a fork to avoid puffing during baking. Glaze all
the cookies with milk or egg white.

Bake the biscuits in pre heated oven at 350°F for 15 minutes. Cool on a
wire rack for 10 minutes.
Spread the jam on plain cookies when still warm and place the biscuits
with the hole on the top.

Bread slices, corner's cut - 6 Jam - 6 tbsp
Method :
Wrap the rolls with a cling film and refrigerate for an hour.
Cut each rolls width wise into 4-6 parts with a sharp knife.

Mexican Rice
Ingredients :
Onion, finely chopped - 1 Mixed herbs – 1 tbsp
Garlic, finely chopped – 5-6 Beans, chopped – ¼ cup
cloves Carrot, chopped – ¼ cup
Kidney beans, boiled – 100 gms Capsicum,(mixed, red yellow and
Tomatoes, chopped – 50 gms green) chopped – ¼ cup
Water or vegetable stock – 2 Ginger-Garlic Paste – 2 tsp
cups Ginger, chopped – 1 tbsp
Rice, cooked – 1½ cup Salt to taste
Olive oil – ½ tbsp
Method :
Add the onions and sauté till they turn to light brown in colour.
Now add the garlic and ginger and sauté for another minute.
Add all the vegetables except capsicum and tomatoes and salt and cook
till the vegetables are done.
Now add capsicum, kidney beans and the paste and stir well.
Add the rice and the remaining ingredients and cook for another 2 minutes
and transfer to the serving bowl.

Vegetable Frankie
Ingredients :
For the filling: Oil - 1 tbsp
Capsicum - 1 Oregano - ½ tsp optional
Potatoes, finely chopped - 2 Soya sauce - 1 tbsp
Beans, finely chopped - 50 gms Chili Sauce - 1 tbsp
Carrot, finely chopped - 3 Salt and Pepper to taste
Onions, finely chopped - 3 Noodles, boiled - 50 gms
Peas - 50 gms
Mushrooms, boiled, chopped - For the dough:
100 gms optional Wheat flour - 1 cup
Cheese spread - 1 tbsp per Oil - 2 tsp + shallow frying

Tomato ketchup - 1 tbsp per

Method :
Mix the ingredients for the dough and knead into soft pliable dough. Keep
aside for few minutes.
In a pan, heat 1 tbsp oil. Add onions and sauté till light brown.
Add the cooked vegetables, mushrooms, noodles and then add the
seasonings and stir.
You may even wrap it with a silver foil or tissue paper half way down so
that while eating the frankie, stuffing doesn't run down.

Ingredients :
Noodles - 200 gms Onion, sliced - 2, big
Beans, juliennes - ¼ cup Garlic, grated - 3 cloves
Carrot, juliennes - ¼ cup Ginger, grated - 2
Capsicum, finely sliced - 1/8 cup Soya sauce - 2 tsp
Cabbage, finely sliced - 1/8 cup Vinegar - 1 tsp
Mushroom, finely sliced - 4 pcs Salt to taste
(optional) Oil - 2 tsp + 1 tsp
Spring onions, only the greens - Chili sauce - 1 tsp
4 stalks
Pepper - to taste

Transfer into a bowl after all the water is drained and keep it in the
refrigerator.
In the meantime, heat 2 tsp oil in a pan. Add onions and sauté them until
light brown in colour.
Add beans and carrot and again sauté for 3-4 minutes until they are
tender.
Add mushroom and capsicum. Cook for 2-3 minutes on medium flame.
Add ginger, garlic and mix well.
Add soya sauce, vinegar, seasonings and then the boiled noodles.
