1 MEDIUM AVOCADO, RIPE ½ CUP ALMOND FLOUR
1/3 CUP AGAVE SYRUP ½ CUP UNSWEETENED COCOA POWDER
½ TSP VANILLA EXTRACT ½ TSP BAKING SODA
¼ TSP MAPLE EXTRACT 1/8 TSP SEA SALT
1 LARGE EGG (ROOM TEMPERATURE)
DIRECTIONS
1. Preheat oven to 350 F. Place parchment paper along a baking sheet.
2. Place the avocado, agave, vanilla extract, maple extract, and egg in a food processor. Process on high for 2 minutes until the avocado is fully broken down and the mixture is creamy. 3. Add almond flour, cocoa powder, baking soda, and salt. Process until completely blended. 4. Using a spoon or an ice cream scoop, place batter on prepared baking sheet in dollops. They will not expand much, so spread them out to desired cookie size. 5. Bake at 350 F for 12-15 minutes depending on the thickness of the cookies. 6. Remove from the oven and let stand for 5 minutes on the baking sheet. Transfer to a wire cooling rack.
