Cheesy Chicken Enchiladas Casserole

If you want to have a Mexican dish on table for today dinner/lunch but have to be
easy and quick, this recipe will give you a hand.

Total Time: 40 minutes (10 minutes of prepared & 30 minutes of cook)


Serves: 8 people

I. Ingredients
 Corn tortillas.
 2 cups of red enchilada sauce.
 3 cups of diced cooked chicken.
 ¼ cup of diced onion.
 3 ½ cups of
Mexican blended
cheese.
 4 tablespoons of
diced canned
green mild chilis.
 1 cup of corn.

II. Instructions
1) Preheat the
oven at 350F.
2) Place 6 tortillas
at the bottom
of a baking dish, let them slightly overlapped each other.
3) Top in ½ cup of enchilada sauce, spread it out evenly.
4) Then top with 1.5 cups of chicken, 2 tablespoons of onion, 2 table
spoon of green chilis, ½ cup of corn and a cup of cheese.
5) Continue fill in the same layer of tortillas, sauce and the remaining
chicken, onion, chilis, corn and another cup of cheese.
6) At last, cover up with another layer of tortillas, 1 cup of enchilada
sauce and the rest cheese.
7) Baked the casserole in the oven for 30-40 minutes, let it stand for
about 5-10 minutes before serving.
